I have no idea where I got this recipe, but it is handwritten in a small book where I saved recipes back in the mid-80s. I haven't made this in ages, but I do recall I used to make it a lot. I think I will make it again today! :-) Ordinary sandwich bread works fine, or use a spiffier bread to make a spiffier pudding. Serve with a vanilla custard sauce, whipped cream, or even ice cream.

4 cups lightly packed bread, cut in cubes (about 4 or 5 slices of bread)
1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 cup raisins
2 cups milk (not skim)
1/4 cup butter or 1/4 cup margarine
2 large eggs, beaten

Steps:

  • Spread bread cubes evenly in an 8-inch round glass pan.
  • Sprinkle with the sugar, salt, and raisins.
  • Place milk in a 4-cup glass measuring cup and add the butter.
  • Microwave on High for four minutes, until butter melts and milk is warm.
  • Rapidly, stir in eggs with a fork or small whisk and combine well.
  • Pour over bread.
  • Microwave on Medium-High for 9 to 12 minutes.

1 cup half-and-half

Use whatever you have handy. I think next time I might pop it under te grill for that crispy topping you don't get in the microwave.

1 egg
2 slices brioche bread, hallah, croissant, buttered
25 g caster sugar
150 ml milk
2 tablespoons cream or 2 tablespoons creme fraiche
1 teaspoon vanilla extract
1/2 teaspoon mixed spice (I omitted this)
25 g dried fruit

Steps:

  • Cut the bread into fingers and layer them in the bottom of a small dish. (About 600 ml capacity).
  • Add dried fruit.
  • Whisk together the egg, milk, cream, vanilla extract and cream.
  • Pour over the bread and let it sit for about 1 hour. If you don't have an hour it does not matter too much.
  • Micorwave on medium power for 4 - 5 minutes until it begins to set at the edges.
  • Let it stand for 5 minutes and then serve with cream or custard and a big grin.

2 cups milk
¼ cup butter

2 cups skim milk
2 eggs
1 teaspoon vanilla
3 teaspoons brown sugar
1/4 cup sultana
8 slices stale white bread
1 tablespoon raspberry jam
1 (415 g) can peaches in juice
1 (415 g) can apricot halves in juice

Steps:

  • Cut 6 slices of bread into squares approx.
  • 1 inch x 1 inch.
  • Place in large casserole dish, with sultanas.
  • Using a can opener, open fruit can approx 1 cm on either side of lid.
  • Drain liquid into jug.
  • Open rest of can.
  • Roughly chop fruit while in can and add to the bread.
  • Toss through.
  • Pour a little of the juice over bread to slightly moisten.
  • Cut remaining 2 slices of bread into quarters, spread with jam.
  • Place over top of mixture.
  • Beat Eggs, add milk, vanilla, and sugar.
  • Pour over bread mixture making sure every piece of bread is moistenned.
  • Stand for 5 minutes, or until bread is quite moist.
  • Sprinkle with cinnamon.
  • Microwave on Medium-High for 12 minutes.
  • Stand for 5 minutes.
  • Microwave on High for 5 minutes.
  • Stand for 5 minutes.
  • Microwave on Medium High for 10 minutes.
  • Stand until cool enough to serve.
  • Tip- Is nice served cold for breakfast with a little evaporated skim milk, or low-fat yoghurt.
  • Variations- If not sweet enough for you try drizzling honey, maple syrup, or caramel topping.
  • Or when making, substitute skim milk and sugar for large can (440ml) of evaporated skim milk.
  • You could also try using slice stale sponge rolletes, and old sponge cake, raisin or fruit bread in place of plain bread.

3 c toasted bread cut into 1/2 " cubes
4 4 eggs
1/3 c white sugar
1/2 c raisins

2 c milk
1/4 c butter or oleo
1 box instant vanilla pudding {3oz.}

Steps:

  • 1. In 2 quart bowl toss bread, 1/2 cup brown sugar, cinnamon and raisins and nuts; set aside.
  • 2. In a 2 quart bowl mix together 4 eggs slightly beaten, 1/2 cup white sugar, 2 cups milk, 1/4 cup butter. Microwave on high power for two minutes. Add to bread mixture, tossing lightly. Place into a buttered glass Sq. 8 x 8 dish Cover with waxed paper, microwave for 8 minutes on high, then lightly toss and microwave for 10 minutes on half power. Let stand for 10 minutes and then sprinkle vanilla pudding over top.
