2 tablespoons mayo
4 tablespoons salted butter (room temperature)
2 teaspoons dijon mustard
1 teaspoon garlic powder
1 cup panko breadcrumbs
1 teaspoon dried basil
Lemon zest of half a lemon
Juice of half a lemon

Steps:

  • Preheat oven to 425 degrees Fahrenheit and prepare a rimmed baking sheet by spraying lightly with cooking spray. Set aside.
  • Gently pat dry both sides of the haddock then season with salt. Place on the baking sheet.
  • In a bowl, mix together all the ingredients for the topping then using your hands, gently and evenly spread it across all the haddock. It doesn't have to be perfect.

4 haddock fillets

salt-free lemon pepper
8 slices apples, not too thick
8 slices onions
8 slices lemons

2 pounds haddock fillets
2 tablespoons chili powder
2 tablespoons ground black pepper
1 (12 ounce) package flour tortillas
1 (6 ounce) container guacamole
1 (8 ounce) carton sour cream
1 head lettuce, shredded
2 cups shredded Cheddar cheese
1 (8 ounce) jar pico de gallo or fresh salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of the glass baking pan with a thin coat of olive or canola oil.
