6 dashes hot sauce, such as Valentina or Tabasco
3 dashes Maggi seasoning or soy sauce
1 to 3 dashes Worcestershire sauce
1/4 to 1/3 cup lime juice
1 bottle (12 ounces) beer, such as Corona, Modelo or Tecate

Steps:

  • Place coarse salt in a shallow dish; run a lime wedge around rims of 2 cocktail glasses. Dip rims of glasses into salt, shaking off excess. Fill each glass with ice. In a small pitcher, combine hot sauce, Maggi seasoning, Worcestershire sauce and lime juice. Add beer. Pour into glasses over ice. Garnish with lime wedges. Serve immediately.

3 cubes ice
1 lime, juiced
1 (12 fluid ounce) can or bottle Mexican beer
½ teaspoon steak sauce
1 dash cayenne pepper
1 dash black pepper
1 pinch dried oregano
1 pinch dried basil

Steps:

  • Moisten the rim of a large beer glass, then press it into salt. Place a few ice cubes in bottom of glass, followed by the lime juice. Pour in half of the beer, then season with steak sauce, cayenne pepper, black pepper, oregano and basil. Slowly pour in the remaining beer. Stir.

1 bottle (12 ounces) pale lager, such as Corona Extra, chilled

Steps:

  • Place about 1/4 cup salt on a small plate. Rub the rim of a Collins or pint glass (or a 16-ounce Solo cup-no need to get fancy) with one of the lime wedges to moisten it, then dip the rim in the salt to coat.
  • Combine the tomato juice, lime juice, hot sauce, Worcestershire sauce, Tajín, and a pinch of salt in a small bowl and mix.

They each have their own michelada recipe, and this is my version of my favorite. Maggi®Jugo seasoning can be found in the international aisle of your grocery store or Hispanic markets and provides an umami flavor. You may substitute soy sauce if necessary. Add more hot sauce if you prefer!

1 teaspoon chili-lime seasoning (such as Tajin®)
½ lime, cut into 2 wedges
ice as needed
¾ teaspoon soy-based liquid seasoning (such as Maggi® Jugo)

3 fluid ounces tomato and clam juice cocktail (such as Clamato®)

In Mexico City, it consists of fresh lime juice, a trinity of Tabasco, Worcestershire and soy sauces, a pinch of black pepper and maybe (or maybe not) a dash of Maggi, the seasoning usually used for soups and stews. This mix makes up two or three fingers' worth of a tall glass. That glass needs ice in it. It needs beer. And it needs drinking. At least, I certainly think it does. It might sound like a hangover recipe, but to me it tastes like malted manna.

2 corn tortillas, cut into 3/4-inch-wide strips
1/4 cup flaky sea salt, such as Maldon, plus more as needed
1 tablespoon chipotle powder
5 limes, juiced (about 4 ounces juice)
6 ounces tomato juice, V8 or Clamato
1/4 cup Mexican hot sauce, such as Cholula or Valentina
3 tablespoons Worcestershire sauce
4 radishes, finely diced into a brunoise
2 stalks celery, peeled and finely diced into a brunoise
1 Persian cucumber, peeled and finely diced into a brunoise
Large ice cubes, for serving
Six 12-ounce Mexican beers

Steps:

  • Add the vegetable oil to a medium saucepan and heat over medium-high heat until hot. Add the tortilla strips, in batches if needed, and fry until crisp on both sides, 3 to 5 minutes. Remove to a paper towel lined plate and season with salt.
  • Combine the salt and chipotle powder in a small mixing bowl and place on a flat tray or a large container lid. Set aside.
  • Reserve 1 tablespoon lime juice in a small dish and combine the remaining lime juice with the tomato juice, hot sauce and Worcestershire and mix well. In a small bowl, mix the diced radishes, celery and cucumber.
  • Dip the rims of 6 pint glasses into the lime juice, then into the salt mixture so a generous coating is on each rim.
  • Put a couple large cubes of ice into each glass. Evenly divide the vegetable mixture on top of the ice. Divide the hot sauce-tomato juice equally among the glasses, then top with the beer. Garnish each with two tortilla strips.
