Number Of Ingredients 5

6 hard boiled eggs
Chives
Radishes, sliced thinly
Cheese
12 black peppercorns

Steps:

  • Slice the cheese and put in the middle of a plate. Cut the hard boiled eggs in half and put around the cheese, with the narrow part of the egg facing in and egg yolk down. The egg white becomes the shape of the mice. Take the radish slices and put two in each egg white for the ears. So, smaller radishes are best. Place two peppercorns under the radish slices for eyes. Take the chives and cut into about 2-inch pieces and tuck into the other side of the egg white for a tail. Enjoy your mice and cheese!

Time 20m

Number Of Ingredients 11

1 Tbsp unsalted butter
1/4 c Panko breadcrumbs, seasoned or plain
2 c uncooked elbow macaroni
1 egg, beaten
2 c shredded Monterey Jack cheese, divided in half
1 c shredded sharp cheddar cheese
4 strips bacon, cooked crisp and crumbled
1/2 tsp salt
1 tsp Dijon mustard (optional)
1 c whole milk
1 tsp finely chopped parsley (1/2 tsp dry)

Steps:

  • 1. Preheat oven to 350 degrees and grease mini muffin tin generously with butter or non-stick spray.
  • 2. Coat insides of mini-muffin tin with bread crumbs (to help the bites hold their shape).
  • 3. Bring large pot of lightly salted water to a boil and add macaroni. Cook 4-5 minutes, just until softened but not cooked through. Remove from heat, drain and return to pot.
  • 4. Stir in butter and egg until pasta is evenly coated.
  • 5. Mix in bacon, mustard, milk, salt, and cheeses (reserving 1 cup Jack cheese).
  • 6. Then spoon into muffin tin, press filling gently with fingers (to help the bites hold their shape). Top with reserved cheese.
  • 7. Bake 15-20 minutes or until top is golden brown.
  • 8. Allow muffins to cool slightly before removing from pan. Garnish with parsley and enjoy.

Tips:

  • Choose the right cheese: For the best results, use a semi-hard or hard cheese that melts well. Some good options include cheddar, mozzarella, fontina, and provolone.
  • Cut the cheese into small pieces: This will help the cheese melt evenly and quickly.
  • Use a non-stick skillet: This will prevent the cheese from sticking to the pan and burning.
  • Cook the cheese over low heat: This will help the cheese melt slowly and evenly.
  • Stir the cheese constantly: This will help prevent the cheese from burning and will also help it melt evenly.
  • Garnish with herbs or spices: This will add flavor and color to the appetizer.

Conclusion:

Mice cheese appetizers are a quick and easy way to enjoy a delicious and festive snack. They are perfect for parties, potlucks, or game days. With just a few simple ingredients, you can create a tasty appetizer that everyone will love.
