Tips:

  • Use ground turkey breast: It's leaner than regular ground turkey and helps keep the meatloaf moist.
  • Choose a flavorful salsa: The salsa adds a lot of flavor to the meatloaf, so choose one that you like. If you like things spicy, choose a salsa with some heat. If you prefer milder flavors, choose a mild salsa or even a salsa verde.
  • Don't overmix the meatloaf: Overmixing can make the meatloaf tough. Just mix the ingredients until they are well combined.
  • Bake the meatloaf in a loaf pan: This helps to keep the meatloaf moist and prevents it from falling apart.
  • Let the meatloaf rest before slicing: This helps the meatloaf to hold its shape and makes it easier to slice.

Conclusion:

Mexican turkey meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover turkey. The meatloaf is moist and flavorful, and the salsa adds a nice kick of spice. Serve it with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
