- In a large bowl, combine 1/4 cup salsa, cheese, paprika, oregano, cumin, sugar, garlic powder, thyme, salt and cayenne. Crumble turkey over mixture and mix well. Steps:
- Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
- Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
- In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
- Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
- Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.

Fresh cilantro is a must for the Pico de Gallo. While you may choose to use a little cooking spray, it is not necessary as the burgers, at first a little sticky, will firm up as they cook.

- Start the barbecue or preheat the grill.
- Remove the core and seeds from the tomato and finely dice the flesh.
- In a bowl, add to the tomato: the turkey, mexican cheese, paprika and fresh coriander. Mix well.
- Divide the mixture into four and shape into burgers. If you have time, cover and chill in the fridge for 20 minutes to let the flavours blend.
- Place a sheet of foil over the barbecue or grill, or use a baking sheet if preferred- because these burgers are made from a low fat meat, they can break up if not handled carefully, so the foil helps them to stay together. Handle and flip them with care.
- Place the burgers on the barbecue or under a grill, on the foil or baking sheet.
- Cook for 15 minutes, flipping regularly.
- If using a barbecue, remove the foil at this point- after 15 minutes- so the burgers pick up the chargrilled flavour in the next 10 minutes.
- Cook for a further 10 minutes (whether using a barbeque or a grill) or until completely cooked through.
- Serve with salsa if desired, on burger buns, Mexican rice, or whatever takes your fancy!
GOURMET MEXICAN TURKEY BURGERS

- If using corn tortillas, toast in pre-heated, 400-degree oven about 15 minutes before turning and toasting for 15 more minutes or until crunchy. Break tortillas into smaller pieces and add a few at a time to the food processor until all are ground to crumbs. Add these crumbs or crushed tortilla chip crumbs to turkey. Combine remaining ingredients, except for oil. Add that to turkey. Form turkey into flat patties that are a little thinner in the middle than on the sides. Brush both sides of patties lightly with oil. Place in refrigerator until ready to cook, up to one day ahead of time. Brush grill or pan with oil and heat to medium high. Cook burgers about 5-6 minutes per side or until center is no longer rare. If desired, top burgers with cheese about one minute before removing from heat. Toast buns on grill or in toaster until slightly browned. Serve with suggested toppings.
