1 Whole Red Snapper (cleaned and scaled. About 2 to 2/12 pounds in weight.)
2 tablespoons of lime juice.
2 Tablespoon of olive oil
1/2 cup of finely chopped white onion
4 garlic cloves (finely chopped.)
1.5 Lbs tomatoes, chopped (or 28 ounces crushed tomatoes)
4 tbsp flat parsley (finely chopped (about 1/4cup).)
2 tbsp fresh thyme (chopped)
2 Bay leaves
1 teaspoon Mexican oregano
1/2 cup of Pimiento Stuffed Olive (whole or sliced.)
1 Tablespoon small capers (rinsed.)
1/4 cup raisins (Optional see note bellow*)
4 Pickled Jalapenos peppers, thinly sliced
1/4 cup dry white wine **

Steps:

  • Season the fish with salt, pepper and lime juice inside and out. Set aside.
  • In a large ovenproof frying pan, heat the oil in on medium heat. Add the onion and sauté until transparent. Your frying pan has to be big enough to fit the fish. If you do not have a large enough oven-proof frying pan, then have a large baking dish ready to bake the fish there. Preheat your oven to 375 degrees.
  • Stir in the garlic and cook for about 2 minutes.
  • Add the crushed tomatoes or chopped tomatoes to the frying pan and cook for about 8 minutes. Add the herbs. Keep cooking for 4 more minutes or until sauce is cooked.
  • If using the dry white wine, add it while the tomatoes sauce is cooking.
  • Before adding the red snapper, add the pickled jalapeños, raisins, olives and capers and cook until the flavors combine, about 4 minutes. Season the sauce with salt and pepper.
  • To bake the fish, add some sauce to the bottom of the baking dish, then place the fish and cover it with the rest of the sauce; bake for about 30 minutes or more. The fish meat should flake when you insert a fork. (If you want to cook it using the stove-top method, place the fish into the frying pan and cover with some of the sauce. 1 teaspoon dried Mexican oregano
3 tablespoons aged sherry vinegar
1/4 cup extra-virgin olive oil
2 tablespoons achiote seeds
1 tablespoon coriander seeds
1 tablespoon dried Mexican oregano
1 tablespoon paprika
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Juice of 2 limes
2 cloves garlic, chopped
1/4 cup canola or other vegetable oil
Four 1 1/2-pound whole pink Thai snappers, gutted and scaled

Steps:

  • For the salsa: Preheat a charcoal grill for medium-high heat.
  • Brush the bell peppers, tomatoes and chiles with oil and season with salt and pepper.
  • Grill the bell peppers until charred on all sides and just cooked through, about 2 minutes per side. Remove to a bowl, cover with plastic wrap and let steam for 15 minutes. Remove the skin and seeds and dice.

  • Grill the chiles until charred on both sides, about 2 minutes per side. Remove to a bowl, cover with plastic wrap and let steam for 10 minutes, and finely chop.
  • Combine the bell peppers, tomatoes, chiles, olives, cilantro, capers, thyme, oregano, vinegar and oil in a medium bowl and season with salt and pepper. Let the mixture sit at room temperature for 30 minutes before serving to allow the flavors to meld.
  • For the snapper: Combine the achiote, coriander and oregano in a small saute pan and toast over low heat until just fragrant, about 2 minutes. Remove from the heat, let cool slightly and grind in a coffee grinder. Combine the ground spices with the paprika, salt and pepper in a large baking dish. Add the lime juice, garlic and oil, and whisk until the consistency a smooth paste. Sprinkle the fish all over with salt and pepper. Rub one side of each fish generously with some of the paste. Cover and marinate for 20 minutes.
  • Preheat a charcoal grill for direct medium-high heat and indirect grilling.
  • Grill the fish, paste-side down, over the direct heat, until the paste is nicely charred, 5 to 7 minutes. Carefully flip the fish over using a large, heavy duty spatula and move the fish to the opposite side of the coals. Cover the grill and continue cooking until just cooked through, 10 to 15 minutes. Steps:

The frying turns the head and the tail into a crunchy fish chicharrón, and the skin and flesh cook evenly, keeping the flesh moist and the skin crisp. While bones are often a concern for those uncomfortable eating whole fish, there's a simple solution: Eat it with your hands. Your fingers will do a much better job of finding bones than your fork will, and the experience is more visceral, and delicious.

1 tablespoon olive oil
2 medium garlic cloves, minced

  • Prepare the adobo: Combine all the adobo ingredients and grind them together in a large pilón or mortar and pestle, or simply mix them together in a small bowl.
  • Prepare the fish: Make three shallow crosswise cuts on both sides of the surface of the fish skin, then place it in a deep container with a lid or a large resealable bag. Pour adobo over, rubbing it into the skin, head and cavity. Let marinate for at least 30 minutes at room temperature, or 2 to 3 hours in the fridge. If marinating longer, let the fish come to room temperature 30 minutes before frying.
  • In a wide, heavy-bottomed pot large enough to submerge your fish, pour in enough oil to reach a depth of at least 2 inches. Heat over high until oil is simmering and reaches 350 degrees on a candy thermometer.
  • Line a baking sheet with paper towels and set aside.
  • Once the oil comes to temperature, pick the marinated fish up by the tail, shake off excess marinade, and lower it head-first into simmering oil. Use a pair of tongs to gently nudge the fish to prevent it from sticking to the pot. It'll be very active at first, so have a splatter shield handy, if you've got one.
  • Using a heat-safe ladle, baste any unsubmerged fish with hot oil repeatedly, ensuring fish cooks evenly. Fry until it turns golden brown, 5 to 10 minutes, watching carefully and removing immediately if it starts to get dark.
  • Using an extra-long fish spatula, or a set of heatproof tongs and a heatproof spatula, carefully lift the fish out of the oil and transfer it to the lined baking sheet.
  • Let rest for 2 to 3 minutes. Garnish with lime wedges, hot sauce and cilantro.
