1 medium yellow onion, chopped
3 cloves garlic, minced
2 pounds lean ground beef, preferably organic
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried Mexican oregano
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 tablespoon Mexican chile paste (homemade or store-bought)
Two 15-ounce cans diced tomatoes, in juice
One 15-ounce can no-salt-added kidney beans, rinsed and drained
One 15-ounce can no-salt-added pinto beans, rinsed and drained
1/2 cup enchilada sauce
3 tablespoons unsweetened chopped chocolate
Crema
Cotija cheese, crumbled
Tortilla strips
Chopped cilantro
Lime wedges

Steps:

  • Heat the oil in a large pot over medium heat. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Stir in the garlic and cook, stirring occasionally, until slightly golden, 2 to 3 minutes. Add the beef, breaking it up with a wooden spoon, and cook for about 5 minutes. 2 pounds lean ground beef
2 pounds chorizo sausage
2 tablespoons olive oil
2 large onions, chopped
3 cloves garlic, minced

1 tablespoon salt

Steps:

  • Pour tomatoes into a large stockpot over medium heat.

4 cups of beans
680 gr of ground beef
1 spoon of chopped garlic
5 spoons of chopped onion
1 spoon of salt
1/2 tbsp of cumin
1 tbsp of oregano
6 guajillo chile
3/4 cups of tomato

Steps:

  • First cut 2 garlic cloves very finely and 5 tablespoons of onion.
  • Place 1.5 pounds of ground beef in a saucepan and add the garlic and onion.
  • Season with 1 tsp. Oregano and 1/2 cumin. Add 1 tsp of salt. Cook everything until the meat is done.
  • While the meat is cooking, place the guajillo peppers to soak in hot water. Make sure they are submerged underwater. We want soft the pulp of the chili. This process takes between 5 and 7 minutes.
  • Blend the chilies in the blender along with 1.5 cups of the beans broth. Pass the pulp through a sieve and add to the meat.
  • Let the meat finish cooking with the guajillo broth and add 3/4 cup of chopped tomato.
  • Add the beans and boil everything for another 5 minutes and ready the perfect and delicious homemade chili recipe.

up to 6 tbsp sunflower oil
4kg stewing beef
4 white onions, sliced
4 tbsp chipotle paste
8 garlic cloves, crushed
50g ginger, grated
1 tbsp ground cumin
2 tsp ground cinnamon
1 tbsp plain flour
2l beef stock
3 x 400g cans chopped tomatoes
1 tbsp dried oregano
5 x 400g cans pinto or kidney beans, drained

Steps:

  • Heat a small drizzle of the oil in an extra-large flameproof dish. Brown the meat in batches, adding a drop more oil, remove from the dish and set aside. Add 1 tbsp oil to the dish, then the onions, and cook for 7-10 mins or until caramelised.
  • Stir the chipotle paste, garlic, ginger, cumin, cinnamon and flour in with the onions and cook for a couple of mins. Gradually add the stock, stirring all the time, so it's fully mixed in with the other ingredients. Add the tomatoes and oregano, season and simmer for 10 mins.
  • Now tip in the beef, cover and simmer very gently for about 1 hr 45 mins until tender, removing the lid and adding the beans for the final 15 mins. If the sauce is thin, let it boil down for a further 5-10 mins with the lid off. Before serving, adjust the seasoning. Serve with the garlic bread and salsa.

1 1/2 lbs beef, cut into 3/4-inch cubes

2 teaspoons ground coriander
1 teaspoon chili powder
3 teaspoons dried oregano
13 ounces can chopped tomatoes
2 tablespoons tomato paste
3 cups beef stock
13 ounces kidney beans, drained
2 tablespoons fresh oregano, chopped

Steps:

  • Put the rice in a heatproof bowl, cover with boiling water, and let soak.
  • Heat 1 tbsp oil in a large, heavy-based pot. Cook the meat. Remove meat from pot but do not dump out oil and drippings.
  • Add the rest of the oil and cook the onion until translucent. Add garlic and chillis and cook 1 minute. Add all the dried spices and cook another 30 seconds.

  • Drain the rice and add to the pot. Add the remaining stock and the kidney beans. Simmer an additional 30 minutes.

2 lbs large dried red kidney beans
2 cups onions, finely diced
3 tablespoons garlic, finely diced
1/4 lb smoked bacon, medium chop

5 cups beef broth

1 teaspoon cumin
1 teaspoon coriander
