4 large baking potatoes
1 jar (16 ounces) black bean and corn salsa
1 package (6 ounces) ready-to-use grilled chicken breast strips
1 cup cubed process cheese (Velveeta)
1 medium tomato, chopped
Optional toppings: Chopped green onions, sliced ripe olives and sour cream

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high until tender, 15-17 minutes, turning once., Meanwhile, in a large saucepan, combine the salsa, chicken and cheese. Cook and stir over medium heat until cheese is melted. , Cut an "X" in the top of each potato; fluff pulp with a fork. Spoon salsa mixture over potatoes and sprinkle with tomato. 1 teaspoon butter or margarine
2 teaspoons flour
1 zucchini medium halved lengthwise and sliced 1/4 -inch
1/2 cup hot water
2 tablespoons green bell peppers chopped
1 teaspoon beef bouillon
1 tomato medium, cut in chunks
2 tablespoons green chilies diced
1/2 teaspoon chili powder
4 ounces sharp cheddar cheese shredded (about 1 cup)

Steps:

  • Bake potatoes Meanwhile, in a large non-stick skillet over medium heat, sauté onion in butter for 3 minutes or until transparent. Sprinkle with flour, stirring to coat.
