2 teaspoons canola oil
2 garlic cloves, minced
1/2 cup finely chopped green pepper

3/4 cup water
1/2 cup tomato puree
1/2 teaspoon chili powder
1/2 teaspoon chicken bouillon granules
1/4 teaspoon salt
Pinch cayenne pepper
1-1/3 cups diced cooked chicken
2/3 cup canned kidney beans, rinsed and drained
1 cup cooked rice

1 medium zucchini, sliced (2 cups)
1 can (15 oz) pinto beans, drained, rinsed
1 can (14 1/2 ounces) no-salt-added whole tomatoes, undrained

  • Remove fat from beef. Cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices.

1 tablespoon vegetable oil
1 garlic clove, minced
1 teaspoon ground cumin
1 teaspoon dried oregano

1 -2 jalapeno pepper, seeded and cut into very thin strips
3 cups iceberg lettuce, shredded

Steps:

  • Trim excess fat from the steak; slice steak diagonally across the grain into 1/8 inch strips. Set aside.
