Easy, Deliciously Cheesy Sauteed Corn, Mexican Style image

Surprisingly, this is a pretty low-cal side dish! I made this last night when I just didn't know what to eat! I knew I felt "cheesy", and there was loads of corn at home, but I didn't feel up to an elaborate recipe, so I put this together and topped this dish over pita bread for a great dinner!

Tips:

  • Choose Fresh Corn: Select fresh corn on the cob with bright green husks and plump kernels for the best flavor and texture.
  • Cut the Kernels Correctly: Use a sharp knife to cut the kernels off the cob, holding the cob vertically and slicing downward. Avoid cutting too close to the cob, as this can result in tough, chewy kernels.
  • Use a Well-Seasoned Skillet: A well-seasoned skillet will help prevent the corn from sticking and will impart a delicious flavor to the dish.
  • Cook Over Medium-High Heat: Cooking the corn over medium-high heat will help to develop a slight char on the kernels, enhancing their flavor.
  • Don't Overcook the Corn: Overcooked corn will become tough and chewy. Cook the corn just until it is tender and slightly browned.
  • Add Flavorful Ingredients: To enhance the flavor of the corn, consider adding ingredients such as diced onion, bell pepper, jalapeño, garlic, cumin, chili powder, or cilantro.
  • Serve Immediately: Sautéed corn is best served immediately, while it is still hot and flavorful.

Conclusion:

Sautéed corn is a quick, easy, and delicious side dish that can be enjoyed on its own or as part of a larger meal. With its vibrant color, sweet flavor, and slightly charred texture, sautéed corn is a popular choice for summer gatherings and potlucks. Whether you prefer it plain or dressed up with additional ingredients, sautéed corn is a versatile dish that is sure to please everyone at the table.
