Steps:
- 1. Place potatoes in a greased casserole dish, melt butter and mix in taco seasoning, pour over potatoes, stir to coat well. Bake uncovered at 425 for 40 minutes. Take out and stir, then bake another 10 minutes.
- 2. In the mean time while potatoes are baking, brown and crumble beef, add onion and cook until onion is soft, then drain. Stir in salsa and peppers. Then when potatoes are done, pour meat mixture over the top of them, top with cheese and bake uncovered for 10 minutes. Serve with additional salsa and sour cream, if desired.
- 3. ***This is good using chicken in place of the hamburger...use ground or shredded,(I tried it with shredded) then use chicken taco seasoning instead of the regular taco seasoning.
Tips:
- Choose the right potatoes: Yukon Gold or Russet potatoes are best for this recipe, as they hold their shape well and have a fluffy texture.
- Shred the potatoes evenly: This will help them cook evenly. Use a food processor or a box grater to shred the potatoes.
- Don't overcook the potatoes: They should be tender but still have a slight bite to them.
- Use a good quality cheese: A sharp cheddar cheese will give the casserole a rich, cheesy flavor.
- Don't be afraid to add your own twist: This recipe is just a starting point. Feel free to add other ingredients that you like, such as diced green chiles, corn, or black beans.
Conclusion:
This Mexican potato casserole is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover potatoes, and it can be easily adapted to your own dietary needs or preferences. Whether you are looking for a hearty weeknight meal or a special dish to serve at a party, this casserole is sure to be a hit.
