These delicious pecan cookies go by many names - Pecan Sandies or Mexican Wedding Cookies/Cake, but they are all the same buttery, melt in your mouth family favorite!

1 cup salted butter
1/3 cup white sugar
2 teaspoons water
2 teaspoons vanilla extract
2 cups sifted all-purpose flour
2 cup very finely minced pecans
1/2 cup powdered/confectioners' sugar

Steps:

  • Using a hand mixer or a stand mixer with the paddle attachment, cream together the butter and sugar until smooth. Beat in the water and vanilla.
  • Stir in the flour and pecans until well blended.
  • Cover the dough with plastic wrap and chill in the fridge for at least four hours.
  • Preheat the oven to 325 °F.
  • Shape the dough into walnut sized balls or crescents. (Crescent shaped are more the traditional Mexican wedding form of these cookies.)
  • Place the dough balls or crescents 2 inches apart onto ungreased cookie sheets.
  • Bake for 18 to 20 minutes in the preheated oven, until golden.
  • Cool on a baking rack, then roll in the confectioners sugar. I don't roll them when they are warm as they still will soak up the powdered sugar while cool and this way they don't get sticky.

2 sticks (1 cup) salted butter, at room temperature
1/2 cup granulated sugar
1 tablespoon vanilla extract
Zest of 1 orange
2 cups all-purpose flour
Pinch of kosher salt
2/3 cup finely chopped pecans
1/2 cup powdered sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, beat together the butter and granulated sugar until fluffy, 2 to 3 minutes. Beat in the vanilla and orange zest until fully combined.
  • In a separate bowl, whisk together the flour and salt. Add the flour mixture gradually to the mixer until just incorporated. Fold in the chopped pecans by hand.
  • Using a tablespoon-sized cookie scoop, portion the dough onto a baking sheet. Chill in the refrigerator for at least 15 minutes.

1 teaspoon vanilla extract
1/2 cup plus more for coating baked cookies confectioner's sugar
1 cup at room temperature butter
1 cup chopped into very small pieces pecans

Steps:

  • Preheat the oven to 275 °F.
  • Line cookies sheets with parchment paper. Using an electric mixer at low speed, cream the butter and confectioner's sugar at low speed until smooth. Beat in the vanilla. At low speed gradually add the flour. Mix in the pecans with a spatula. With floured hands, take out about 1 tablespoon of dough and shape into a crescent. Continue to dust hands with flour as you make more cookies. Place onto prepared cookie sheets. Bake for 40 minutes. Roll in additional confectioner's sugar while still warm. Cool completed, on wire racks. Makes about 2 1/2 dozen cookies.

Steps:

  • Place egg white in a small bowl; let stand at room temperature 30 minutes., Preheat oven to 375°. In a large bowl, beat lard until creamy. In another bowl, whisk flour, baking powder, cinnamon and salt; gradually beat into lard., Beat egg white on high speed until stiff peaks form. Gently whisk in sugar and egg yolk. Gradually beat into lard mixture. Turn onto a lightly floured surface; knead gently 8-10 times., Divide dough into 6 portions. On a lightly floured surface, roll each portion into a 24-in.-long rope; cut diagonally into 1-in. pieces. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until edges are light brown. Cool on pans 2 minutes., In a small bowl, mix sugar and cinnamon. Roll warm cookies in cinnamon sugar mixture or confectioners' sugar. 1/2 cup toasted then finely chopped pecans
1 cup sifted powdered sugar

  • In a large bowl beat butter 30 seconds.
  • Add 1/2 cup powdered sugar and cinnamon; beat until combined.
  • Beat in 2 teaspoons water and vanilla.
  • Stir in flour and pecans with a wooden spoon.
  • Shape into 1-inch balls.
  • Place on ungreased cookie sheet 1 inch apart.
