1 ½ cups medium chunky salsa
1 cup mayonnaise
½ cup sour cream
1 (16 ounce) can black beans, rinsed and drained
1 (11 ounce) can Mexican-style corn with red and green peppers, drained
½ cup chopped red bell pepper
2 green onions, sliced thin
1 (4.25 ounce) can sliced black olives, drained
½ teaspoon garlic powder
½ teaspoon ground cumin, or to taste
½ teaspoon dried cilantro, or to taste
1 teaspoon salt
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a rolling boil; cook the rotini in the boiling water until the pasta is cooked through yet firm to the bite, about 8 minutes. Drain. Rinse under cold running water until completely cooled; drain thoroughly.

1/2 cup crushed corn chips
4 green onions, sliced

Steps:

  • Heat oven to 350° F. Spray 9-inch square baking dish with cooking spray. Cook and drain pasta shells as directed on package.
  • In 10-inch skillet, cook ground beef and onion over medium-high heat 5 to 6 minutes, stirring occasionally, until beef is brown; drain.

1 green bell pepper, chopped
½ cup sweet corn kernels
1 (15 ounce) can black beans, drained

¼ cup sliced black olives
1 ½ tablespoons taco seasoning mix
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Steps:

  • Heat oven to 350°F. Grease 4-quart casserole.
  • Cook beef in 10-inch nonstick skillet over medium heat 5 minutes, stirring occasionally, until brown; drain.

1/3 cup mayonnaise
3 tablespoons sour cream

1 cup canned black beans, drained and rinsed
1 cup shredded rotisserie chicken, skin and bones removed
1/4 cup finely chopped red onion

  • Bring a large pot of salted water to a boil.

Steps:

  • Preheat oven to 350ºF.
  • Grease 4-quart casserole dish.

1/2 cup mayonnaise

1 can (4.5 oz) Old El Paso™ chopped green chiles
1/4 cup crumbled queso fresco cheese

Steps:

  • Cook and drain pasta as directed on package. Cool 10 minutes.
  • While pasta is boiling, heat 10-inch skillet over high heat. Add butter and corn to skillet. Char the corn on each side, about 10 minutes total. Cut corn off cobs; place in large bowl.
  • Add cooked pasta to bowl. Top with remaining ingredients. Stir well to combine.

1 (16 ounce) box elbow macaroni
2 garlic cloves
1 (16 ounce) jar salsa (I used medium)
8 ounces cream cheese
1 cup sour cream
1 (16 ounce) can refried beans
2 tablespoons hot sauce
1 teaspoon cumin
1 teaspoon chili powder
4 ounces canned jalapeno slices
2 cups four-cheese Mexican blend cheese

Steps:

  • Preheat oven to 350°F
  • Cook macaroni until al dente; set aside.
  • Sauté garlic in 2 Tbsp olive oil about 30 seconds on medium heat. Add jar of salsa and bring to simmer. Add in can on refried beans a dollop at a time. (I used wire whisk to whisk in). Add hot sauce to taste. If too thick at this point add a little bit of water. I actually put some in the same jar as the salsa and got the extras out. Simmer 10 minutes.
  • Add 4 oz of the cream cheese in dollops (again using wire whisk to blend in). Once the cream cheese is blended, add the cup of sour cream and stir. Sauce will be thick and creamy. I added a dash of cumin and chili powder--your preference on the spices.
  • Spray casserole dish and add in pasta. Stir in sauce mixture until blended. Top with dollops of remaining cream cheese. Sprinkle with shredded cheese and top with jalapeño slices.
  • Bake covered with foil 30-40 minutes Enjoy!

I put Sopa in the title because that is what my mom calls it and I'm not sure if there is a better name for this dish. It is a wonderful side dish and I just made it a few moments ago and I had to share. You can use almost any type of pasta.

2 cups of uncooked pasta (I use small pasta shells, you can use almost anything. If you use a long pasta like spaghetti, break)
2 tablespoons olive oil
1/4 cup onion
1 garlic clove, minced
1 teaspoon salt
1 (8 ounce) can tomato sauce
1/4 cup of shredded cheddar cheese
water

Steps:

  • Heat the olive oil in a 2 qt sauce pan.
  • Put the uncooked pasta, onions and garlic in 2 qt sauce pan.
  • Stir regularly until onions become translucent and pasta has brown spots on it where it has fried.
  • Put tomato sauce and salt in sauce pan.
  • Put enough water in saucepan to cover pasta completely but not too much.
  • Stir then cover saucepan and let simmer for 5 minutes.
  • Uncover saucepan and let water cook down until sauce nearly disappears, stirring ocassionally.
  • Once the liquid has mostly disappeared, sprinkle with cheese, take off heat and cover with lid so cheese can melt.

1/3 cup finely chopped onion
1 garlic clove, minced
1 tablespoon vegetable oil
a 15-ounce can black beans, rinsed and drained (about 1 1/3 cups)
a 10-ounce can mild enchilada sauce
a 3-inch pickled jalapeño chili if desired, chopped fine (wear rubber gloves)
1/4 cup sour cream
freshly grated Monterey Jack or sharp Cheddar to taste
2 scallions, sliced thin

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta. Cook pasta until tender, about 12 minutes.
  • While pasta is cooking, in a 2- to 3-quart heavy saucepan cook onion and garlic in oil over moderately low heat, stirring occasionally, until softened. Add beans, enchilada sauce, and jalapeño and simmer gently, stirring occasionally, until thickened, about

3/4 box of Angel Hair Pasta, snapped in two.
1 1/2 cups (or more) water.
1/4 cup fat free half & half.
1/2 pound Chorizo sausage (which I made myself using recipe here and some ground pork with common spices).
1 small can Rotel brand tomatoes with Cilantro and Lime.
1 small can Refried Beans.
1 1/2 teaspoons Apple Cider Vinegar.
2 teaspoons Ketchup.
1/2 teaspoon onion powder.
1/2 teaspoon garlic powder.
1 tablespoon chili powder.
1 teaspoon salt.
1/2 diced green pepper.
2 tablespoons vegetable cooking oil.
2 Small cans of condensed tomato soup.
(For an "over the top" experience, buy some "queso fresco", sour cream, and heavy cream, assuming you have iodized salt at home. You can try something a little different if you have some Miracle Whip salad dressing.)

Steps:

  • Pinch the Chorizo sausage into a hot pan with cooking oil. Add diced green pepper. Brown Chorizo sausage. Add water, tomato soup, and all spices/salt. Add angel hair pasta and cook until it is nearly done. Add Rotel tomatoes with lime and cilantro (in the can). Add fat free half & half. Stir in can of refried beans until it dissolves into sauce. Taste and conduct final seasoning. Cook to desired tenderness. Adjust consistency by stirring in water. (Note: You could top this with "queso fresco", but the stuff is, in my experience, flavorless, and this recipe tastes fine to me without the added fat. If you go the "queso fresco" route, you'll want to drizzle some "Mexican Creme" on top of it. You can make "Mexican Creme" by mixing 1 cup sour cream, 1 cup heavy cream, and 1 teaspoon of salt together, and letting it sit for a while before refrigerating. Watch out for bacteria, or you'll have a cheap restaurant, guacamole too long at room temperature, intestinal experience... For the "little different" experience, take a dab of Miracle Whip and liquefy it to a creamy, pour-able texture with some hot water, then drizzle the resulting dressing lightly over the top of the hot pasta, like a hot, Mexican, pasta salad with some spicy and sweet flavor. 1 pound bulk spicy pork sausage
1 medium onion, chopped
1/2 cup chopped green pepper
1 can (14-1/2 ounces) stewed tomatoes

1 cup uncooked spiral pasta
2 tablespoons brown sugar
1 to 2 teaspoons chili powder
1 teaspoon salt
Parmesan cheese, optional

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Add onion and green pepper; cook until tender. 1 1/2 lb ground beef
1 pkg taco seasoning mix
1 (15oz) can(s) diced tomatoes
1/2 c green bell pepper
1 1/2 tsp garlic powder
1 1/2 tsp oregano, dried
12 oz spiral pasta cooked and drained
1 1/2 c cheddar cheese, shredded (divided)
1 c sour cream

Steps:

  • 1. * In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, tomatoes, green pepper and spices. Bring to a boil; remove from the heat.
  • 2. * Meanwhile cook pasta until just done and drain. Combine the pasta, 3/4 cup cheese and sour cream. Spoon into a greased 2-qt. baking dish.
  • 3. * Top with meat mixture and remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through.

8 ounces uncooked bow-tie pasta
1/4 cup vegetable broth
1 onion, chopped
2 jalapeño peppers, seeded and minced
1 1/2 teaspoons minced fresh garlic
1/2 teaspoon chipotle chili powder
1 (14.5-ounce) can stewed tomatoes
1 (15-ounce) can pinto beans, drained and rinsed
1 1/4 cups enchilada sauce
1/4 cup chopped fresh cilantro (optional)
1/2 cup tofu sour cream (optional; recipe available at www.drmcdougall.com)

Steps:

  • Place a large pot of water on to boil and cook pasta according to package directions. Drain and set aside.
  • Preheat the oven to 350°F.
  • Place the broth in a large nonstick pan. Add the onion, jalapeños, and garlic. Cook, stirring occasionally, until softened, about 5 minutes. Stir in the chipotle chili powder. Add the tomatoes, beans, and enchilada sauce. Mix well, breaking up the tomatoes slightly. Cook, stirring occasionally, for 10 minutes. Add the cooked pasta and mix well. Ladle the mixture into a casserole dish. Bake covered for 25 minutes. Uncover and bake for 5 minutes longer.
  • Serve with cilantro and tofu sour cream to spoon over each individual serving, if desired.

While visiting Mexico as a teenager, I found this rich and comforting soup to be plentiful and delicious in the tourist area at least. Not sure exactly how traditional it is, but it is very quick and simple to put together and loaded with tomato flavor and toasted, nutty pasta. If you wish to skip pureeing of fresh vegetables, I don't see why you couldn't substitute with a jar of your favorite salsa. I plan to try that myself next time just to see the difference. Hope you enjoy this recipe.

1 cup dry pasta, preferably small in size
2 tablespoons vegetable oil
3 small tomatoes, cored and chopped
1 garlic clove, peeled and smashed
1/4 cup white onion, diced
salt & freshly ground black pepper
1 quart chicken broth
1 dash hot sauce

Steps:

  • In a 2 quart, or larger, sauce pan, heat the 2 tbsp of vegetable oil over medium high heat. Once oil is hot, stir in the dried pasta (small elbows or alphabet letters work nicely, but any smaller shape works). Stir frequently so that the pasta toasts evenly. It will become brown and very fragrant in about 5-8 minutes. Remember to check often so that pasta doesn't become too dark or burned.
  • In the meantime, in your blender (or with a stick blender in a large measuring cup) add the chopped tomatoes, garlic, and diced onions and puree until completely smooth.
  • When pasta is evenly toasted, add the tomato puree to the pan. Be careful, the puree will sizzle possibly splatter once it hits the pan. Stir gently until the pasta is coated in the puree. Add salt and pepper and continue to cook, stirring frequently, until the pasta soaks up the liquid and the mixture has reduced, leaving the pasta coated in a thick tomato paste-like sauce. Approximately 7-10 minutes.
  • Carefully add the chicken broth, or any kind of broth or stock you wish, and let the soup come to a simmer to finish cooking the pasta. Stir occasionally for about 15 minutes. Add a few dashes of your favorite hot sauce and remove from heat. Serve as is or with some chopped fresh cilantro or thin sliced green onions.
  • -OPTIONAL- Add 1 cup of frozen sweet corn, thawed, 1/2 cup shredded carrots, 1/4 cup chopped cilantro, or thinly sliced cabbage, fresh lime juice, shredded, cooked chicken or pork. Add when adding stock, for a more substantial meal.
  • We used a vinegary Jalapeno hot sauce and really liked it. This soup tastes best when made with ripe tomatoes, especially heirloom tomatoes. I used black/brown heirlooms and it was deeply flavored and complex.
