Tips:

  • Choose the right ground meat: You can use ground beef, pork, or turkey. For a leaner meatloaf, use ground turkey. If you're using ground beef, choose a leaner cut, such as ground chuck or ground round.
  • Use fresh breadcrumbs: Fresh breadcrumbs will help to keep the meatloaf moist and flavorful. If you don't have fresh breadcrumbs, you can use store-bought breadcrumbs, but make sure they're not too dry.
  • Don't overmix the meatloaf mixture: Overmixing the meatloaf mixture can make the meatloaf tough. Just mix the ingredients until they are combined.
  • Shape the meatloaf into a loaf: Use your hands to shape the meatloaf mixture into a loaf. Make sure the loaf is evenly shaped so that it cooks evenly.
  • Bake the meatloaf at a high temperature: Bake the meatloaf at a high temperature (400 degrees Fahrenheit) for the first 30 minutes. This will help to brown the outside of the meatloaf and keep the inside moist.
  • Reduce the temperature and continue baking: After 30 minutes, reduce the temperature to 350 degrees Fahrenheit and continue baking the meatloaf for another 30-45 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for 10-15 minutes before slicing. This will help the juices to redistribute throughout the meatloaf, making it more flavorful and easier to slice.

Conclusion:

Mexican meatloaf is a delicious and flavorful dish that is perfect for a weeknight meal. It's easy to make and can be customized to your liking. With these tips, you can make a perfect Mexican meatloaf every time.
