I meant to make burritos one night but I was in a hurry, so I layered everything together in a casserole dish to save time. The result was this Mexican layered casserole and a yummy go-to dish that is easily customizable for things I usually have on hand. You could add chicken or beef if you'd like, but we eat it as-is! Top with chopped cilantro and chopped green onions.

LAYERED MEXICAN CASSEROLE

Layered Mexican Casserole image

When my children were young, we had a mexican fiesta night. I came up with this casserole and the whole family absolutely loved it. It has also been a hit at many church and other potluck dinners. It can easily be tweeked to suit your family's tastes. You can also increase the amount of cheese, if you like. Hope y'all enjoy!

Time 50m

Number Of Ingredients 9

1 - 1 1/2 lb ground beef
1 pkg taco seasoning
1 tsp cumin
1 tsp chili powder
2 can(s) (15 oz.) cans refried beans
2 pkg spanish rice mix prepared according to package directions
2 1/2 - 3 c shredded sharp cheddar cheese, or any other hard cheese that you prefer.
tortilla chips
TIP: THE SPANISH RICE MIX CALLS FOR STEWED TOMATOES, BUT I USE ROTEL INSTEAD.

Steps:

  • 1. Preheat oven to 350 degrees. Coat 9 X 13 casserole dish with cooking spray. Brown ground beef and add taco seasoning, cumin, and chili powder and cook according to package directions. You may also add any other spices that you prefer. Prepare spanish rice according to package directions. Set aside.
  • 2. In prepared casserole dish, layer the seasoned ground beef, refried beans, half of the cheese, spanish rice and remaining cheese. Crush tortilla chips and sprinkle on top. Line casserole edges with unbroken tortilla chips for decoration.
  • 3. Bake at 350 for approximately 25 to 30 min, or until heated through. Let stand approximately 5 minutes before serving. Serve with sour cream, shredded lettuce and diced fresh tomatoes. Enjoy!

Tips:

  • Choose the right tortillas: Corn tortillas are the traditional choice for Mexican layered casseroles, but you can also use flour tortillas or even wonton wrappers for a crispy variation.
  • Layer in flavor: Don't be afraid to experiment with different fillings and toppings. Some popular options include shredded chicken or beef, black beans, corn, salsa, cheese, and sour cream.
  • Don't overfill the casserole: Leave some room at the top so that the casserole doesn't bubble over in the oven.
  • Bake until golden brown: The casserole is done when the cheese is melted and bubbly and the top is golden brown.
  • Let it rest before serving: Allow the casserole to cool for a few minutes before serving so that it has time to set.

Conclusion:

Mexican layered casseroles are a delicious and easy way to enjoy a traditional Mexican meal. With just a few simple ingredients, you can create a flavorful and satisfying dish that the whole family will love. So next time you're looking for a quick and easy dinner idea, give Mexican layered casserole a try. You won't be disappointed!
