2/3 cup cucumber, chopped and drained
1 cup diced onions or 1 cup spring onion
2 whole tomatoes, finely diced and well-drained
1/2-3/4 cup shredded low-fat sharp cheddar cheese or 1/2-3/4 cup sharp cheddar cheese
1/4 cup sliced green olives or 1/4 cup black olives (optional)

Steps:

2 tablespoons vegetable oil
1 pound ground beef
1 medium onion
1 (15 ounce) can black beans, drained
1 (14 ounce) can green enchilada sauce
1 (4 ounce) can chopped green chiles
1 (12 ounce) package white corn tortillas
1 cup sour cream
1 cup crumbled corn chips
2 cups shredded Cheddar cheese
1 (6 ounce) can sliced black olives
1 tomato, chopped
