1 ¾ cups guacamole

Steps:

  • Heat refried beans in a microwave-safe bowl in a microwave oven until hot, stirring frequently, about 3 minutes. Spread beans onto the bottom of a serving platter; refrigerate until the beans are cooled completely, about 10 minutes.
  • Spread guacamole in a layer atop the beans. Spread sour cream atop the guacamole. Sprinkle cheese over the sour cream; top with tomatoes.

It's great served either hot or at room temperature with warm tortilla chips (we like it with Tortilla Scoops) and an ice cold beer or margarita. Optional: Add strips of grilled carne asada or pollo asada and layer in a dish for a killer nachos supreme! Tip: I use recipe #117797 for the seasoning.

1 cup sour cream
2/3 cup mayonnaise
1 (1 ounce) package lawry's taco seasoning mix (or Mexican Seasoning Mix, to taste)
2 (4 ounce) cans diced green chilies (or salsa)
4 somewhat firm avocados, diced small
2 tablespoons fresh lemon or 2 tablespoons lime juice
1 teaspoon salt
1/4 teaspoon garlic powder
2 cups cheddar cheese, shredded

2 cups tomatoes, chopped
6 ounces chopped black olives
3 tablespoons chopped fresh cilantro

Steps:

  • In a 13 x 9-inch glass serving dish, spread the refried beans.
  • Mix together the sour cream, mayonnaise and seasoning mix. Spread this on top of the beans.
  • Put on a layer of the chopped green chiles (both cans). Note: You may substitute 8 ounces of chunky salsa for the chopped green chiles.
  • Mix together the diced avocados, lemon juice, salt and garlic powder. Spread this on top of the green chiles.

1 medium onion, diced
2 cloves garlic, minced
1 (15.5-ounce) can black beans, preferably low-sodium, drained and rinsed
1 tablespoon minced chipotle pepper in adobo
4 tablespoons lime juice
1/4 teaspoon ground cumin
1 tablespoon water
1/2 teaspoon salt
2 cups corn kernels (10-ounce box frozen corn)
1/4 cup chopped cilantro leaves
2 ripe avocados
4 medium tomatoes, seeded and diced (about 2 cups)
1/4 cup thinly sliced scallion
1 tablespoon finely diced jalapeno pepper, optional
3/4 cup shredded extra-sharp Cheddar

Steps:

  • Heat the oil in a skillet over medium-high heat. Add onions and cook until they soften, about 3 minutes. Stir in the garlic and cook for 2 minutes more.
  • Put half of the onion mixture into a food processor with the black beans, chipotle pepper, 2 tablespoons of the lime juice, cumin, water and salt. Puree until smooth. Set aside.
  • Add the corn to the skillet with the remaining onion mixture and cook for about 3 minutes. Remove from the heat and stir in the cilantro leaves.
  • In a small bowl mash the avocado with the remaining lime juice. In a medium bowl toss together the tomatoes, scallion and jalapeno, if using. Season tomato mixture with salt and pepper, to taste.
  • Spread the black bean dip into the bottom of an 8 by 8 glass baking or serving dish. Top with the corn mixture, spreading it out to form a single layer over the beans, repeat with the avocado, then the tomatoes. Top with cheese. Serve with baked chips.

1 (16 ounce) jar all-natural salsa (I prefer Frog Ranch Chipotle)

12 ounces all-natural guacamole (I like Calavo)
3 cups lettuce, shredded
2 beefsteak tomatoes, coarsely chopped
2 cups finely shredded cheddar cheese
8 ounces black olives, sliced
6 ounces green pimento stuffed olives, sliced
2 -4 green onions, coarsely chopped

Steps:

  • In large mixing bowl, combine refried beans and salsa. Consistency should be that of cake frosting--spreadable but not thick. Adjust amount of salsa accordingly.
  • Spread bean and salsa mixture onto serving platter. (I use the back of a metal serving spoon.).
  • Layer remaining ingredients.
  • Serve with Baked Tostitos Scoops Tortilla Chips.
  • NOTES: Also great as a meal. Even my green-veggie-phobic children devour this dish! This recipe is moderately spicy. Change the heat of the salsa to adjust. I sometimes use different greens (prepackaged salad mixes) instead of iceberg lettuce and use different cheeses (pepperjack kicks it up a few notches!).

8 ounces sour cream (lowfat or fat free is fine)

1 1/2 cups grated sharp cheddar cheese (or a reduced fat cheese if you wish, use more if you love cheese)
3/4 cup diced green onion
3/4 cup diced green pepper (small pieces)
8 pitted black olives, sliced thinly

Steps:

  • Using an electric mixer, beat the sour cream and cream cheese until smooth and creamy.
  • Spread mixture evenly on an oval platter or"medium" pizza pan size plate.
  • Cover evenly with salsa, a good thick layer.
  • The pan size will determine how much you need.
  • Sprinkle lettuce evenly all over.

  • 1. Place the re-fried beans and taco seasoning into a bowl and stir until combined. Using a 9" x 13" glass baking dish, spread the mixture evenly over the bottom of the dish to create the base.
  • 2. Layer all of the other ingredients evenly one at a time:order does not matter, but do finish off with the cheese, onion and olives on top. Place in the refrigerator over night so the flavors can blend together.
  • 3. Notes: For a cold salad, place everything over a bed of lettuce in a round dish so that it can be scooped. For a warm dip omit the lettuce and place the layered dip onto a 250 degree oven right from the frig for about 10 minutes just enough to warn it...not melt it.

For the beans:
4 oz. chorizo sausage
1½ cups (1 15 oz. can) cooked black beans
1/2 cup water, veggie or chicken broth, plus more as needed
Salt and pepper, to taste
For the guacamole:
2 ripe avocados, split and pitted
1 tbsp. freshly squeezed lime juice
1 jalapeño, seeded, ribbed and finely chopped
2-3 tbsp. minced cilantro
½ tsp. kosher salt, plus more to taste
1 cup fresh tomatillo salsa
Crumbled queso fresco
Diced red onion
Cherry or grape tomatoes, quartered
For the sour cream:
1/3 cup sour cream (or low fat plain greek yogurt)
1 chipotle in adobo sauce, seeded and chopped
Squeeze of fresh lime juice
For the Tomatillo Salsa:
8 oz. tomatillos, husked, rinsed and quartered
1 large clove garlic, peeled and roughly chopped
1 jalapeño, seeded and chopped
1/2 to 2/3 cup cilantro, roughly chopped
¼ cup water
½ tsp. coarse salt
Puree in a blender until chunky. DO NOT OVER BLEND!

Steps:

  • To make the bean layer, heat a skillet over medium-high heat. Crumble the chorizo into the skillet and cook until evenly browned, about 5 minutes. Stir in the beans and then the liquid. Bring to a simmer, then reduce the heat to medium-low and continue to simmer until the beans are softened and most of the liquid has evaporated, about 5-7 minutes more. Remove the pan from the heat. Smash the beans and the chorizo together in a coarse mash, adding additional liquid if necessary a tablespoon at a time so the mixture is not dry. Taste and adjust seasoning as necessary with salt and pepper. Spread the bean mixture onto a large round serving plate. Chill while you prepare the next layers. To make the guacamole layer, combine the avocado flesh, lime juice, jalapeño, cilantro and salt in a bowl. Mash together with a fork until fairly smooth. Taste and adjust seasoning as necessary. Spread the guacamole layer over the bean layer on the serving plate. Continue to layer with the tomatillo salsa, queso fresco, red onion, and tomatoes. Combine the sour cream with the chipotle and lime juice and blend together with a small food processor or immersion blender. Drizzle over the top of the dip. Cover and chill until ready to serve.* *While many of the components could be made in advance (beans, tomatillo salsa, and chipotle sour cream), it is best to make the guacamole fresh and assemble the dip not too long before you plan to serve it.

2 avocados
1 tablespoon fresh lime juice
salt
1/4 teaspoon garlic powder
1/8 teaspoon ground cumin
1 (8 ounce) package fat free cream cheese, softened
1/2 cup nonfat sour cream
1/2 cup salsa
1 teaspoon ground cumin
1 (15 ounce) can fat-free vegetarian refried beans
1 teaspoon garlic powder
1 cup shredded lettuce
1 cup shredded fat-free cheddar cheese
1 large fresh tomato, diced
1 (2 1/4 ounce) can sliced black olives
non-fat tortilla chips (I prefer Wow brand)

Steps:

  • Slice avocadoes in half; remove seed; Peel away outer skin and place fruit in bowl.
  • Cover fruit with lime juice and mash with fork.
  • Season with salt to taste, 1/4 tsp.
  • garlic powder, and 1/8 tsp.
  • cumin.
  • Beat together cream cheese, sour cream, salsa, and the 1 tsp.
  • cumin in a mixing bowl; set aside.
  • In another small bowl mix together refried beans and the 1 tsp.
  • garlic powder (garlic salt o. k.) to taste.
  • Spread beans over the bottom of a serving dish or large casserole.
  • On top of this spread the guacamole, leaving a small area of beans exposed.
  • Place sour cream/cream cheese over guacamole, leaving a small area of guacamole exposed.
  • Sprinkle lettuce over sour cream/cream cheese, leaving a small area of that exposed.
  • Cover lettuce with sprinklings of first: cheese, then tomatoes, then black olives.
  • To garnish, place a few tortilla chips around the perimeter of the dish.
  • Keep chilled until time to serve, but do not chill chips.

1 can (16oz) refried beans
16 oz sour cream
1 pkg Taco Seasoning mix
2 cups (8oz) cheddar cheese, shredded
1 cup prepared guacamole
1 cup chopped tomato
1/2 cup sliced green onion
1/2 cup sliced black olives
Tortilla Chips

Steps:

  • Spread refried beans in shallow serving dish. Mix sour cream and seasoning mix until well blended. Spread over refried beans. Layer with cheese, guac, tomatoes, onions and olives. Serve with Tortilla chips.

2 medium ripe avacados
1 Tbsp lemon juice
1/2 c diced tomatoes
2 Tbsp minced onion
1/8 tsp salt
dash of black pepper
1 can(s) (10 oz.) bean dip
1 c shredded cheddar cheese
1 c shredded montaray jack cheese
1/4 c sliced black olives
chopped tomatoes to garnish
chopped green onion to garnish

Steps:

  • 1. mash avacados; stir in lemon juice, 1/2 cup chopped tomatoes, minced onion, salt and pepper. Set aside.
  • 2. Spread bean dip in a shallow 9-inch dish. Spread avacado mixture over the bean dip. Sprinkle with Monterey Jack cheese.
  • 3. Repeat layers and sprinkle with cheddar cheese.
  • 4. Spread sour cream over the top and sprinkle with olives, tomatoes and green onions.
  • 5. Chill for several hours and serve with corn chips.
