1 can (16 ounces) refried beans
1 can (4 ounces) chopped green chilies
1 envelope taco seasoning
2 tablespoons hot salsa
12 ounces uncooked lasagna noodles
4 cups shredded Colby-Monterey Jack cheese, divided
1 jar (16 ounces) mild salsa
2 cups water
2 cups sour cream
1 can (2-1/4 ounces) sliced ripe olives, drained
3 green onions, chopped
1 medium tomato, chopped, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in beans, chilies, taco seasoning and hot salsa., In a greased 13x9-in. baking dish, layer a third of the noodles and meat mixture. Sprinkle with 1 cup of cheese. 2 medium onions, chopped (about 2 1/2 cups)
1 red bell pepper, stem and seeds removed, chopped (about 1 cup)

SAUCE
1 qt spaghetti sauce
1 pt enchilada sauce
1 tsp each: chili powder, garlic powder, ground cumin
1/8 tsp cayenne pepper (optional)
1/3 c water
MEAT
1 1/2 lb ground beef, browned, fully cooked and crumbled
lightly seasoned with salt and pepper
CHEESES
6 - 8 slice american cheese singles or melting cheese singles
1 pkg (8 ounces or more) cheddar cheeses (shredded) or any cheese of your liking
TORTILLAS
1 pkg (8 - 10) flour tortillas (can also use corn tortillas)
CORN
1 c whole kernel corn (drained)
CHILI
1 can(s) hormel chili with beans
OPTIONAL INGREDIENTS
shredded lettuce, chopped tomatoes, sour cream, taco or hot sauce

Steps:

  • 1. Preheat oven to 350 degrees. Oil a 9x13 inch baking dish.
  • 2. Mix sauce ingredients together. Place a thin layer of sauce on the bottom of baking dish.
  • 3. Put two rounds of tortillas on top of the sauce. Tear apart another tortilla to "fill in the gaps" along ends and sides and middle.
  • 4. Add a thin layer of sauce to cover tortillas. Place broken apart chesse singles on top of sauce layer. Sprinkle half of the ground beef on top of the cheese layer.
  • 5. Repeat direction 3 with the tortillas. Add a thin layer of sauce. Add the Hormel Chili with Beans. Add some pieces of cheese and sprinkle with whole kernel corn.
  • 6. Add another layer of tortillas. Put the remaining sauce on top. Sprinkle with remaining ground beef. Sprinkle generously with the shredded cheese.
  • 7. Bake uncovered until bubbly and the cheese is melted and browned lightly. (About 25 minutes). Remove from oven. Let sit 5 minutes before serving. Cut into desired size squares. As a side dish this will serve 10. As the main dish, it will serve 6.
  • 8. *** You can add toppings if desired, like: shredded lettuce, chopped tomatoes, sour cream and shredded cheese. and of course favorite taco or hot sauce.

I got this recipe from Robin Miller's Quick Fix Meals. I have made this several times and my husband loves it. And it is so easy to make! I usually just buy Tyson's ready cooked chicken breast strips (two 6oz pkgs) pre-seasoned with southwestern spices. I sometimes use multi-grain flour tortillas, when I can find them in the store.

12 ounces cooked chicken, cut into 1-inch cubes (about 3 cups)
1 cup sour cream (regular or low-fat)
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
1/2 cup salsa (mild, medium or hot)
1 (4 ounce) can chopped green chilies
1 teaspoon ground chili powder
1/4 teaspoon cayenne pepper
8 flour tortillas, cut in half

Steps:

  • Preheat oven to 350 degrees F.
  • Coat a square baking pan with cooking spray.
