Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. 3 boneless, skinless chicken thighs, cut into 1/4-inch strips
Kosher salt
2 poblano chiles, halved lengthwise, stemmed, seeded and cut into 1/4-inch strips
2 medium tomatoes, chopped
2 cloves garlic, thinly sliced
12 small corn tortillas
3 1/2 cups shredded Mexican cheese blend (about 14 ounces)
1/2 cup grated Parmesan
1/2 cup sour cream
2 cups shredded romaine lettuce
2 radishes, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Brush the inside of an 8-inch square baking dish with oil.
  • Toss the chicken with 1/2 teaspoon salt in a medium bowl. Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, undisturbed, until it begins to brown in spots, about 2 minutes. Add the poblanos, tomatoes and 1/2 teaspoon salt and cook, stirring frequently, until the chicken is cooked through, the peppers are crisp-tender and the tomatoes are saucy, 5 to 6 minutes.   • Break the egg into a medium-size mixing bowl, and beat with a whisk or fork until foamy; Add the sour cream and 1 cup of the cheese; Stir to mix well; Spoon half of the sour cream mixture evenly over the tortilla layer and spread it out with the back of a spoon; Scatter half of the corn and black beans over the sour cream mixture.
  • Place 5 more tortilla strips evenly over the corn and black bean layer; Top with the remaining sour cream mixture, and the remaining black beans and corn; Place the remaining tortilla strips over the dish; Pour the remaining tomato sauce mixture over the tortillas, and spread it evenly with the back of a spoon to moisten all of the tortilla strips.
  • Cover the dish with foil, and bake for 30 minutes, or until hot and bubbly.
  • While the dish bakes, rinse and trim the green onions; Slice the green onions thinly, using all of the whites and enough of the tender green tops to make 1/2 cup; Set aside.
  • If using the black olives, drain them well, and set aside.
  • After baking lasagna, scatter the green onions and olives, if using, evenly over the dish; Return the dish to the oven, uncovered, for 5 more minutes.
  • Remove the dish from the oven, and scatter the remaining cup of Mexican cheese evenly over the dish.
  • Return the dish, uncovered, to the oven, and bake until the cheese melts, about 3 minutes.
  • Remove the lasagna from the oven, and let it stand 10 minutes; Slice into squares and serve.

1/2 lb lean ground beef (I buy regular ground beef cook it and drain and rinse it very well several times and freez in 1/2 lb)
16 ounces fat-free refried beans
16 ounces tomato sauce
1 cup water
1 teaspoon cumin
1 teaspoon garlic powder
1 tablespoon chili powder
1 teaspoon onion powder
1/4 teaspoon ground red pepper
12 corn tortillas
2 ounces monterey jack pepper cheese
4 ounces 2% cheddar cheese

Steps:

  • Mix ground beef (cook first if not previously cooked), fat free refried beans, tomato sauce, 1 cup water, 1 teaspoons cumin, 1 teaspoons garlic powder, 1 Tbl. chili powder, 1 teaspoons onion powder, & 1/4 teaspoons ground red pepper.
  • Simmer until beans have "melted" stir in the pepper jack cheese.
  • Cut corn tortillas into quarters.
  • Spray bottom of 9X13 baking dish with PAM.
  • Layer 1/3 of tortillas on bottom.
  • Spoon 1/3 of meat, bean, & tomato sauce mixture. Repeat.
  • Sprinkle reduced fat cheddar on top of last layer.

EVOO
2 teaspoons ground cumin

1 can (28 ounces) or 2 cans (14 ounces) tomatillos
1 small bunch cilantro
2 limes
2 teaspoons light agave or acacia honey
About 1/2 cup chicken stock
1 rotisserie chicken
10 to 12 corn tortillas or flour tortillas, 6 inches
1 bottle (15 ounces) Mexican crema or 2 cups sour cream
1 pouch (12 ounces) shredded Swiss, or a 12-ounce brick, grated
1 pouch (12 ounces) shredded Pepper Jack or Monterey Jack cheese, or a 12-ounce brick, grated
Non-aerosol cooking spray
1 small red onion
Pepitas, pumpkin seeds, about 1/2 cup
John's Margarita, for serving, recipe follows
Ice
2 ounces tequila blanco, Patron Silver preferred brand
2 ounces fresh lime juice
2 ounces elderflower liqueur, St. Germaine preferred brand
Lime wheel, for garnish

Steps:

  • Preheat broiler to high with rack at center oven.
  • Gather your ingredients.
  • Halve, peel and chop onion, seed and chop jalapeno peppers and crush and chop garlic.
  • In a large skillet, heat EVOO, 2 turns of the pan, over medium-high heat. Add onions, jalapenos, garlic, cumin, salt and pepper. Stir a few minutes to soften, then add 1/2 cup water and let it absorb. Add tomatillos, chop a small handful of cilantro and add, then stir in juice of 1 lime, agave or honey and stock.
  • Remove the skin and bones from chicken, pull meat or chop into small pieces and add to sauce.
  • Char the tortillas to blister and soften over open burners or in a dry stainless or cast-iron skillet on electric stovetop over high heat.
  • In a bowl, stir up the crema with juice of 1 lime and shredded cheeses.
  • Assemble lasagna in 8-by-8, 9-by-9 or 9-by-13 casserole (a 9-by-13 will be tighter and cook faster because the layers will be more spread out). Spray the casserole, then add some tortillas, half the chicken and sauce, tortillas, half the cream and cheese, tortillas, half the chicken and sauce, tortillas, half the cream and cheese. Place in oven and broil until brown and bubbly.
  • Meanwhile, peel red onion and thinly slice on mandoline or by hand. Toast some pepitas in small skillet. Chop more cilantro.
  • Top lasagna with toasted seeds, red onions and cilantro. Cut into 4 portions to serve.
  • Fill a rocks glass with ice. Add all ingredients to a shaker with ice. Shake with ice and strain into rocks glass. Garnish with a lime wheel.

  • Brown meat and drain off fat stir in one can enchilada sauce then set mixture aside.
  • In bowl pour in 2 cans enchilada sauce,.
  • Spray your baking pan with non stick spray.
  • To began start with a corn tortilla and dip the entire tortilla into the enchilada sauce one at a time.
  • Place the shell onto bottom of baking pan and continue this until bottom of pan is covered.
  • Then place a layer of the meat mixture.
  • A layer of cheese and repeat with the tortilla,meat,cheese.
  • Continues this until pan is full.
  • when finished pour the remaining enchilada sauce over the entire pie.
  • Top it off with another layer of cheese.
  • Bake at 350 for 25-30 minutes or until bubbly.
  • Top with your favorite toppings.
  • This pie can also be made up to 24 hours ahead just make it as above (do not bake) cover and refrigerate but increase baking time from 30 to 45 minutes.

The spinach flavored tortillas really make this something special. If you like spicy foods, be adventurous and try Jalapeno Cheddar tortillas. *NOTE* If you plan to have leftovers, the reviewers recommend serving the tortillas on the side and not layering with them. The tortillas get will be soggy after sitting in the refrigerator. Doing that makes assembly a snap! :)

Steps:

  • Preheat the oven to 425 degrees F.
  • TO COOK THE FILLING: Preheat a large skillet over medium high heat.

  • Add chicken and season with chili powder, cumin, and red onion.
  • Brown the meat, 5 minutes.
  • Add taco sauce or stewed or fire roasted tomatoes.

2 tablespoons vegetable oil, plus more for greasing the baking dish and frying the tortillas
3 boneless, skinless chicken thighs, cut into 1/4-inch strips
Kosher salt
2 poblano chiles, halved, stemmed, seeded and cut into 1/4-inch strips
2 medium tomatoes, chopped
2 cloves garlic, thinly sliced
12 small corn tortillas
3 1/2 cups Sargento Fine Cut Shredded 4 Cheese Mexican blend (14 ounces)
1/2 cup grated Parmesan
1/2 cup sour cream
2 cups shredded romaine lettuce
2 radishes, thinly sliced
Special equipment: an 8-inch square baking dish

Steps:

  • Preheat the oven to 350 degrees F. Brush the inside of an 8-inch square baking dish with oil. Toss the chicken with 1/2 teaspoon salt in a medium bowl. Heat 2 tablespoons of oil in a large nonstick skillet over medium-high heat. Add the chicken, and cook, undisturbed, until it begins to brown in spots, about 2 minutes. Add the poblanos, tomatoes and 1/2 teaspoon salt, and cook, stirring frequently, until the chicken is cooked through, the peppers are crisp-tender and the tomatoes are saucey, 5 to 6 minutes. Remove the skillet from the heat, and stir in the garlic. Transfer the chicken, vegetables and juices to a medium bowl to cool. Wipe out the skillet, add enough oil to just cover the bottom and heat over medium heat. Once the oil begins to shimmer, add 3 of the tortillas, and fry until they are hot but still pale, about 10 seconds per side. Remove the tortillas to a baking sheet and sprinkle with salt. Fry the remaining tortillas in 3 batches of 3, adding and heating oil as needed between batches. Cover the bottom of the prepared baking dish with 4 overlapping tortillas. Top with half the chicken-poblano mixture, sprinkle with 1 cup of the cheese blend and 1/4 cup of the Parmesan and dollop with 1/4 cup of the sour cream. Top with 4 more overlapping tortillas, the remaining chicken-poblano mixture, 1 cup of the remaining cheese blend and the remaining 1/4 cup each of Parmesan and sour cream. Top with the remaining tortillas and 1 1/2 cups shredded blend. Cover the dish loosely with foil, and bake until the lasagna is hot and the cheese is melted, about 25 minutes. Remove the foil, and bake for 5 minutes more. Let rest for a few minutes. Cut into 4 squares, place on 4 serving plates and divide the romaine and radishes among the plates.

2 envelopes taco seasoning mix
1 (28 ounce) can enchilada sauce, divided
4 (15 ounce) packages flour tortillas, cut in half - divided
2 (16 ounce) cans fat-free refried beans
2 (12 ounce) packages queso fresco (Mexican cheese), thinly sliced - divided
2 (16 ounce) packages shredded reduced-fat Mexican cheese blend, divided
1 (16 ounce) jar nopalitos (sliced cactus), drained - divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a large disposable aluminum roasting pan with cooking spray.
  • Brown ground beef in a large skillet over medium heat, breaking the meat into crumbles as it browns, 10 to 12 minutes. Drain excess grease and stir in taco seasoning and half the enchilada sauce. Reserve remaining enchilada sauce for later use. Bring beef mixture to a boil, reduce heat to low, and simmer until thickened, about 5 minutes. Set meat aside.
