2 cups grated carrots
2 cups peeled and julienned jicama
1 cup chopped fresh cilantro
1/2 cup yellow mustard
1/2 cup catsup
4 tablespoons white vinegar
2 teaspoons sugar
1 minced garlic clove
salt & pepper

Steps:

  • Blend all dressing ingredients in a food processor.
  • Pour over vegetables and mix well.
