1 medium red onion, halved and thinly sliced
1 cup shredded white cheddar (4 ounces)
1 tablespoon red-wine vinegar
1 head Boston lettuce (about 10 ounces), torn into pieces
1/2 cup store-bought salsa, for serving

Steps:

  • In a medium bowl, whisk eggs with 1/2 teaspoon salt and 1/4 teaspoon pepper; set aside. In a 10-inch nonstick skillet with a tight-fitting lid, heat 1 tablespoon oil over medium-high. 1 cup frozen corn
6 egg whites
2 eggs
1/4 cup skim milk
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup mozzarella cheese, shredded (or monterrey jack)
