Time 25m

Yield 2 1/2 dozen, 30 serving(s)

Number Of Ingredients 8

1/2 cup butter, softened
2/3 cup sugar
3 egg yolks
1 teaspoon vanilla extract
1 1/2 cups sifted all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup nonpareils

Steps:

  • Preheat oven to 375°F.
  • Beat the butter, sugar, egg yolks and vanilla extract together.
  • Combine the flour, baking powder and salt, and sift them into the butter mixture. Stir to make a smooth dough.
  • Shape the dough into small balls. Poke your thumb in the center of each ball to make a hole, and shape into rings.
  • Dip each ring in nonpareils.
  • Bake on lightly greased cookie sheets for 10-12 minutes, or until lightly browned.
  • Cool before storing.

Tips:

  • Chill the dough before rolling and cutting. This will help the cookies hold their shape better and prevent them from spreading too much in the oven.
  • Use a sharp knife to cut the dough. This will help you get clean, even cuts.
  • Don't overwork the dough. Overworking the dough will make it tough.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before decorating them. This will help prevent the decorations from melting or sliding off.

Conclusion:

Mexican cookie rings are a delicious and festive treat that are perfect for any occasion. They are easy to make and can be customized with your favorite flavors. With a little planning and effort, you can create beautiful and delicious cookie rings that will impress your friends and family.
