GRILLED BANANAS WITH RUM ICE CREAM AND MEXICAN HOT CHOCOLATE SAUCE

Yield Serves 4

Number Of Ingredients 15

4 firm-ripe bananas
1/2 stick (1/4 cup) unsalted butter, melted and cooled
1/4 cup firmly packed brown sugar
For rum ice cream:
2 cups heavy cream
2 cups milk
1 vanilla bean, halve lengthwise
a 2-by 1/2-inch piece lemon zest, removed with a vegetable peeler
2/3 cup firmly packed brown sugar
8 large egg yolks
1/4 cup good-quality dark rum such as Bacardi Black
For Mexican hot chocolate sauce:
1/4 pound (about 1 1/2 tablets) Mexican chocolate* such as Ibarra, chopped
1 cup half-and-half
available at some specialty foods shops

Steps:

  • Prepare grill.
  • Peel bananas and halve lengthwise. In a shallow baking pan large enough to hold bananas in one layer stir together butter and brown sugar and add bananas, tossing gently to coat. Transfer bananas with a metal spatula to an oiled rack set 5 to 6 inches over glowing coals and grill until browned and cooked through, about 2 minutes on each side. (If bananas are difficult to handle you may grill them on 1 side only.)
  • Serve bananas like a banana split with ice cream and chocolate sauce.
  • To make rum ice cream:
  • In a 2 1/2- to 3-quart heavy saucepan combine cream and milk. Scrape seeds from vanilla bean into cream mixture, dropping in bean. Add zest and bring mixture just to boil.
  • In a large metal bowl whisk together brown sugar and yolks until combined well. Add hot cream mixture to yolk mixture in a slow stream, whisking, and return custard to pan. Cook custard over moderately low heat, whisking constantly, until thickened and coats back of a wooden spoon, about 3 minutes. (Do not let custard boil or it will curdle.)
  • Pour custard through a very fine sieve into cleaned metal bowl and cool slightly. Stir in rum and chill, covered, until cold. Freeze custard in an ice-cream maker. Makes about 1 1/2 quarts.
  • To make Mexican hot chocolate sauce:
  • In a heavy saucepan heat chocolate and half-and-half over low heat, stirring frequently, until chocolate is melted. (The sauce will have a very thin consistency, like that of hot chocolate.) Serve sauce warm. Makes about 1 cup.

SPICY MEXICAN CHOCOLATE ICE CREAM

Spicy Mexican Chocolate Ice Cream image

This is an excellent chocolate ice cream. It's very rich and creamy. The addition of cinnamon and cayenne turn it up a notch. It's a spicy and exceptionally delicious Mexican treat. This ice cream has heat, and I've been told it's like my Recipe#287655 in ice cream form.

Categories     Frozen Desserts

Time 5h30m

Yield 6 1/2 cup, 6 serving(s)

Number Of Ingredients 11

1 cup heavy cream
1 cup whole milk
1 cup skim milk
2 ounces unsweetened chocolate
1/2 cup unsweetened cocoa powder
1 vanilla bean
2 eggs
1 cup sugar
1/8 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon cayenne pepper

Steps:

  • Slice the vanilla bean in half lengthwise and scrape the seeds (do not discard), set aside.
  • Roughly chop the chocolate and melt in a medium sauce pan together with milk and cream (over medium heat). After the chocolate has melted, whisk in the cocoa powder, avoiding clumps. Add the vanilla bean and seeds. Bring the mix to just under a boil (150° on a candy thermometer), stirring frequently. Remove from heat and let the mix steep, covered, for 30 minutes to an hour.
  • Remove the vanilla bean. Reheat mix over moderate heat until hot (150 degrees), stirring frequently.
  • Whisk the eggs, sugar and salt together in a small bowl.
  • Temporarily remove the pan from the heat. Add 1/2 cup hot cream mixture to the eggs/sugar in a slow stream, whisking constantly. Whisk the egg/cream mix back into the saucepan and return to medium-low heat, STIRRING CONSTANTLY until a candy thermometer reads 170 degrees (do not let it boil).
  • In a medium to large bowl (that cream mixture will be chilled in) combine the cinnamon and cayenne pepper. Pour a small amount of the chocolate cream through a strainer into the bowl and whisk to combine, avoiding clumps. Pour the remaining chocolate cream mixture through the strainer and whisk to combine.
  • Cool completely in the refrigerator (at least 4 hours). Freeze in an ice cream maker. Transfer to an airtight container and put in freezer to harden.
  • Notes: DO NOT add more than 1/8 tsp cayenne pepper. The flavor intensifies as it freezes in the ice cream maker. If you don't have 1/8 tsp, use 1/4 tsp and remove half the cayenne.
  • Notes: To chill more quickly, place the final mixture in an ice and cold-water bath for 30 minutes (a larger bowl for the ice water, a smaller bowl filled with the cream mixture that will sit in the "bath"). Stir frequently.

MEXICAN CHOCOLATE ICE CREAM

MEXICAN CHOCOLATE ICE CREAM image

Categories     Dessert     Frozen Dessert

Number Of Ingredients 12

2 cups heavy whipping cream
1 cup milk
1/4 cup cocoa powder
4 ounces bittersweet or semi-sweet chocolate
1/2 cup sugar
2 teaspoons cinnamon
Pinch salt
Pinch cayenne
Pinch espresso powder (or instant coffee)
6 egg yolks, lightly beaten
1 teaspoon vanilla extract
2 Tbsp brandy (optional)

Steps:

  • 1 Heat one cup of cream in a small saucepan (1 qt). Whisk in cocoa powder. Bring to a simmer. Whisk until cocoa powder is well incorporated. Remove pot from heat. Stir in chocolate until completely incorporate. 2 Put mixture into a metal bowl and add the remaining cup of cream. Set that bowl over a larger bowl half-filled with ice water to help cool it down. Place a mesh sieve over the bowl with the chocolate mixture. 3 Put one cup of milk, the sugar, cinnamon, salt, cayenne, espresso powder (or instant coffee) into a saucepan and heat until steamy (not boiling), stirring to incorporate the spices and dissolve the sugar. Place egg yolks in a medium sized bowl. Slowly pour the heated milk and mixture into the egg yolks, whisking constantly so that the egg yolks are tempered by the heated milk, but not cooked by it. Use a rubber spatula to scrape the warmed egg yolks back into the saucepan. 4 Stir the milk egg mixture constantly over medium heat with a wooden spoon, scraping the bottom as you stir, until the mixture thickens and coats the spoon so that you can run your finger across the coating and have the coating not run. This can take anywhere from 3 to 10 minutes, depending on how hot your burner is. 5 As soon as the mixture coats the spoon, remove it from the heat and immediately pour it over the mesh sieve into the bowl of the chocolate cream mixture. (The sieve is there to catch any curdled bits.) Stir into the cream mixture. 6 Add a teaspoon of vanilla. Let the mixture cool a bit in the ice bath and then chill in the refrigerator until completely chilled, a couple hours or overnight. Right before churning, add 2 Tbsp of brandy to the mix. This is an optional step, but it will help keep the ice cream from getting too icy if it is stored beyond a day. If you are planning on eating the ice cream the same day you make it, you can skip this step. 7 Churn the mixture in your ice cream maker according to the manufacturer's instructions.

MEXICAN CHOCOLATE ICE CREAM RECIPE - (4.5/5)

Mexican Chocolate Ice Cream Recipe - (4.5/5) image

Provided by HeatherS

Number Of Ingredients 8

3 eggs
1/2 cup sugar
6 cups half-and-half or light cream
1 16-ounce can chocolate-flavor syrup
1 tablespoon vanilla
l/2 teaspoon ground cinnamon
1/4 teaspoon almond extract
2 cups whipping cream

Steps:

  • In a medium bowl beat eggs with an electric mixer on medium speed until frothy. Add sugar and beat until thick. In a Dutch oven heat half-and-half until almost boiling. Stir 1 cup of the hot half-and-half into the egg mixture; return all to the Dutch oven. Cook and stir about 3 minutes or just until boiling (watch carefully because mixture will foam). Remove from heat; strain mixture through a fine-mesh sieve. Stir chocolate-flavor syrup, vanilla, cinnamon, and almond extract into strained mixture. Set mixture aside to cool slightly. Cover and chill for up to 24 hours. Stir in whipping cream. Freeze in a 4- to 5-quart ice cream freezer according to the manufacturer's directions. Ripen* about 4 hours before serving. Tip: Ripening homemade ice cream improves the texture and helps keep it from melting too quickly during eating. To ripen in a traditional-style ice cream freezer, after churning, remove the lid and dasher and cover the top of the freezer can with waxed paper or foil. Plug the hole in the lid with a small piece of cloth; replace lid. Pack outer freezer bucket with enough ice and rock salt to cover top of freezer can (use 1 cup salt for each 4 cups ice). Ripen about 4 hours. When using an ice cream freezer with an insulated freezer bowl, transfer the ice cream to a covered freezer container and ripen by freezing in your regular freezer about 4 hours (or check the manufacturer's recommendations). Time: PREP: 20 minutes CHILL: up to 24 hours REEZE: per manufacturer's directions RIPEN: 4 hours

Tips:

  • Use high-quality chocolate. The quality of the chocolate you use will greatly affect the flavor of the ice cream. Look for a chocolate that is at least 70% cocoa solids and has a rich, complex flavor.
  • Don't over-churn the ice cream. Over-churning can make the ice cream icy and grainy. Churn the ice cream until it is thick and creamy, but still slightly soft.
  • Let the ice cream ripen before serving. After churning, transfer the ice cream to a freezer-safe container and let it ripen for at least 4 hours before serving. This will allow the flavors to develop and deepen.
  • Serve the ice cream with your favorite toppings. Mexican chocolate ice cream pairs well with a variety of toppings, such as whipped cream, chocolate chips, chopped nuts, or fresh fruit.

Conclusion:

Mexican chocolate ice cream is a delicious and easy-to-make treat that is perfect for any occasion. With its rich, chocolatey flavor and hint of spice, this ice cream is sure to be a hit with everyone who tries it. So next time you're looking for a sweet treat, give Mexican chocolate ice cream a try.
