- Preheat the oven to 350 degrees F (175 degrees C).
- Combine tomatillos, serrano peppers, and garlic in a bowl. Drizzle with olive oil and toss to coat. Transfer to a baking sheet.
- Place in the preheated oven and roast until tender, about 30 minutes. Remove vegetables from oven, cool slightly, and transfer to the bowl of a food processor. Puree until smooth. Reduce oven temperature to 275 degrees F (135 degrees C).
- While vegetables are roasting, heat lard in a Dutch oven or heavy oven-safe pot over medium-high heat. Sprinkle pork with garlic salt and pepper and add to the pot in batches. Cook each batch until browned, about 7 minutes, removing to a plate with a slotted spoon. Drain and discard all but 2 tablespoons pan drippings.
- Add onion and bell pepper to the pot. Saute, stirring occasionally, until onion has softened and turned translucent, about 5 minutes. Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in browned pork, tomatillo puree, chicken stock, cilantro, oregano, cumin, and salt.
- Cover and cook in the oven until pork is tender, 3 1/2 to 4 hours. Allow to stand for 15 minutes, covered, before serving.

- 2. To increase the heat use a hotter chili powder, and more cayenne. To decrease the heat reduce the chili powder and cayenne, and increase the paprika.
- 3. Save those spice bottles. I make a lot of my own spice combinations, but I buy a lot of individual spices. When a bottle goes empty, I remove the label, and toss it into the dish washer. Then, when I make my "special" spice mixtures, I slap my own label on, and stick in in the cupboard.
- 4. Gather your ingredients (mise en place).
- 5. Add all the ingredients together in a jar, and keep in a cool, dry place, away from sunlight.
- 6. PLATE/PRESENT

- Sauté the chicken breasts in the olive oil in a large pot over medium/high heat.
- Cook the chicken on both side until done-- about 7-10 minutes per side.
- Cool the chicken until it can be handled.
- Do not rinse the pot.
- Shred the chicken by hand into bite-sizes pieces and place the pieces back into the pot.
- Add the remaining ingredients to the pot and turn heat to high.
- Bring mixture to a boil, then reduce heat and simmer for 4-5 hours.
- Stir mixture often so that many of the chicken pieces shred into much smaller bits.
- Chili should reduce substantially to thicken and darken (less orange, more brown) when done.
- Combine some chopped Italian parsley with sour cream and serve it on the side for topping the chili, if desired.

- 1. Fry the hamburger drain and pour into large stock pot. In the same fry pan add 1 to 2 tablespoons of oil of your choice. Fry the peppers and onions together. Add the peppers and onions to pot.

- For the meatballs, combine all meatball ingredients in a large bowl, mix with hands. Refrigerate and cover for 1 hour.
- Meanwhile for the sauce, if using fresh tomatoes, place on a cooking sheet and broil, turning once or twice until the skins bister and blacken, about 10 minutes. Peel the skin off tomatoes and place the peeled (or canned tomatoes) in to a blender or food processor.

- Stir in the remaning 2 cups broth and heat to a boil. Stir in mint. Taste again, adjust salt and pepper, and add some adobo from the canned chilies if not spicy enough.
- Shape the meat mixture into meatballs (about 1 inch diameter), the mixture should make 60 meatballs. Add the meatballs to the sauce, Shake the pan once or twice in the first 5 minutes of cooking to prevent sticking. Simmer slowly until the meatballs are done, about 30 minutes.

- Preheat the oven broiler.
- Spread the tomatoes, garlic, poblanos, onion, and Serrano chile out on a rimmed baking sheet. - 1. Mix all ingredients and blend well. Store in an air tight container.
- 2. For tacos: Brown 1 pound of hamburger and drain. Add 2 T. of seasoning, 2 T. of ketchup, and 1/2 cup water. Simmer stirring occasionally until liquid is reduced. Use for nachos, tacos, taco salad, or on hot dogs for chili dogs with cheese and onions.
- 3. For beans: Sort, rinse, and soak 1 cup of pinto beans. Add to pot with 1 rounded tablespoon of seasoning mix, 3 slices cooked crumbled bacon, and 1 T. of fat or oil. Cover with water. Cook until beans are tender. To make baked beans, add ketchup, brown sugar, and onion to taste. Bake as desired. These beans are so good and the only way I prepare them now!
- 4. For dip: Add 3 T. mix to 1 cup each of sour cream and mayonaise. If desired add 1 or more of the following: 1/2 cup shredded cheddar cheese, 1/4 c. crumbled cooked bacon, 1 chopped green onion. Refrigerate to blend flavors.
- 5. For chili: Make mix as for tacos but increase mix to 1 1/2 tablespoons. After making meat, add 1 can of kidney or pinto beans, drained and about 2 cups of low or no sodium tomatoes (I use a pint of home canned). Simmer for about 20 minutes. Tastes even better for lunch the next day!
- 6. For sloppy joes: Make mix as for tacos but do not cook yet. Add 2-3 T. brown sugar, 2 tsp. mustard, 1 tsp ground horseradish, 2 tsp. worcesterchire sauce and 1/4 cup ketchup. Simmer for about 10 minutes. Serve on buns with pickles, cheese, chopped onions, and mustard. This is good on mashed potatoes too.
- 7. I have used this to season cooked chicken, beef, and pork for tacos and burritos. I have used it like a rub on grilled meat. It is really good!
