So good and so easy! I got this from my SIL, and even though it is more like chicken enchiladas, this is the name that came with it. Cook time does not include cooking and shredding chicken.

Tips:

  • Prep your ingredients beforehand: Dicing the chicken, chopping the vegetables, and measuring out the spices and herbs before you start cooking will make the process much smoother and faster.
  • Don't overcook the chicken: Chicken breasts are very lean and can easily become dry and tough if overcooked. Cook them until they are just cooked through, about 5-7 minutes per side.
  • Use flavorful cheese: The type of cheese you use can make a big difference in the taste of your crepes. Use a cheese that is flavorful and melts well, such as Monterey Jack, cheddar, or mozzarella.
  • Don't overcrowd the pan: When cooking the crepes, don't overcrowd the pan. This will make it difficult to flip them and may cause them to tear.
  • Serve immediately: Crepes are best served immediately after they are made. They can be kept warm in a low oven until you are ready to serve them.

Conclusion:

These Mexican chicken crepes are a delicious and easy-to-make meal that is perfect for any occasion. They are filled with flavorful chicken, cheese, and vegetables, and they are topped with a creamy tomatillo sauce. The crepes are soft and tender, and they are the perfect vessel for all of the delicious fillings. Whether you are serving them for breakfast, lunch, or dinner, these crepes are sure to be a hit.
