1 tablespoon extra-virgin olive oil
1 pound boneless skinless chicken breasts (or thighs, cut into 3/4-inch pieces)
1 small yellow onion (chopped)
2 small jalapenos (or 1 large jalapeno, core and seeds discarded, diced)
1 red bell pepper (chopped)
2 teaspoons chili powder
2 teaspoons garlic powder
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 can black beans ((15 ounces), rinsed and drained)
1 cup long or medium-grain brown rice
1 can diced tomatoes in their juices ((15 ounces))
3 medium green onions (chopped)

Steps:

  • Heat the olive oil in a large skillet or Dutch oven with a tight-fitting lid over medium to high heat. Once hot and shimmering, swirl to coat the pan, then add the chicken, onion, jalapeno, and red bell pepper. Cook for 3 to 5 minutes, until the chicken is browned and the onion is beginning to soften. Add the chili powder, garlic powder, cumin, oregano, salt, and pepper. Stir to coat the chicken and cook 30 seconds. Add the black beans and rice. Stir to coat once more.
  • Add the diced tomatoes in their juices and 1 1/2 cups water. Stir to combine the ingredients. Bring to a gentle boil, cover, then reduce the heat and let simmer 30 minutes. 1 tbsp sunflower oil
1 onion , finely sliced
3 garlic cloves , crushed
1 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
400g can black beans , drained but not rinsed
about 150g cooked chicken
4 pickled chillies , chopped
3 tomatoes , roughly chopped
small handful coriander leaves , chopped
4 floured tortillas (seeded or wholemeal if you prefer)
100g cheddar , grated
100g plain yogurt
50g chipotle sauce
1 lime , quartered
guacamole (optional)

Steps:

  • Heat the oil in a frying pan, tip in the onion and fry for 5 mins until golden. Stir in the garlic, cumin, paprika and oregano and cook for 2 mins. Tip in the beans and the chicken and heat through, then stir in the chilli, tomatoes and coriander, season and keep warm.
  • Lay a tortilla in a non-stick pan, sprinkle with cheese and heat until melted. Slide the wrap onto a board, spoon over a quarter of the chicken filling and roll up tightly. Repeat to make three more wraps. Mix the yogurt and chipotle sauce and serve on the side with guacamole and lime wedges for squeezing over.

1 medium green pepper, chopped
1 small onion, chopped
2 tablespoons canola oil
1 can (8-3/4 ounces) whole kernel corn, drained
1 cup chicken broth
1 cup salsa
1/2 to 1 teaspoon salt
1/2 to 1 teaspoon chili powder, optional
1/4 teaspoon pepper
1-1/2 cups uncooked instant rice
1/2 to 1 cup shredded cheddar cheese

6 large chicken drumsticks
1 large Beefsteak tomato
1 small Vidalia onion
3 garlic cloves
2 cups long grain uncooked rice
1 can (7 ounces) Old El Paso™ chopped green chiles
1/2 cup frozen corn
1/2 cup frozen peas
2 cups of water
Cilantro, chopped (optional)
Lime, wedges (optional)
Salt to taste

Steps:

  • Season chicken drumsticks with 1/2 packet of taco seasoning mix.
  • Sear chicken drumsticks on a medium high heat skillet with just a touch of oil. Once chicken is brown all around, set chicken aside.
  • On a food processor or blender, blend tomato, onion, and garlic. Add this into a large skillet, over medium high heat and let it cook for a minute or two.
  • Keep adding the rest of the ingredients to the pan: rice, chiles, corn, peas, and the remainder taco seasoning mix. Stir well and cook for a minute or two. Adjust salt level to taste.
  • Add water and bring to a boil.
  • Place chicken on top of the rice.
  • Cover well, and cook on low for 20-25 minutes until rice has absorbed all of the liquid.

1 cup rice, prepared as per package directions
1 cup frozen corn
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup picante sauce (thick and chunky works best, but you can use whatever you like)
2 cups shredded cheddar cheese
8 large tortillas (I like the jalepeno and cheddar ones)

Steps:

  • In a skillet, combine the chicken and one package of the taco seasoning and prepare as you would tacos, doubling the amount of water. Add the corn and bring to a boil.
