1 onion, chopped
1 green bell pepper, seeded and diced
1 -2 tablespoon fresh minced garlic
1 large jalapeno pepper, seeded and finely chopped (optional)
2 -4 teaspoons cumin (or to taste)
salt and black pepper
2 (10 ounce) cans red enchilada sauce
1 (15 ounce) can black beans (rinsed and well drained)
2 cups frozen corn
9 corn tortillas
2 cups shredded Mexican blend cheese, divided (can use more or less)
2 plum tomatoes, finely chopped
sour cream
green onion
coarsley crushed tortilla chips

Steps:

  • Set oven to 350 degrees.
  • Grease an 11 x 7-inch baking dish.
  • In a large skillet brown the ground beef with onion, garlic, green bell pepper and jalapeno (if using) until the beef is no longer pink; drain any fat then return to skillet and add in one can of enchilada sauce, black beans, corn and cumin.
  • Bring the ground beef mixture to a boil; reduce heat to medium-low and simmer for 20-25 minutes stirring occasionally, then season with salt and lots of black pepper.
  • Arrange 3 corn tortillas in the bottom of the baking dish, cutting as needed to cover bottom of the dish.
  • Spread 1/4 cup canned enchilada sauce over the tortillas in the baking dish.
  • Cover the sauce with 1/3 of the cooked ground beef mixture, then about 1/3 of the shredded cheese.
  • Repeat the layers twice but omitting the final cheese layer on top.
  • Drizzle any remaining canned enchilada sauce (from the second can) on top.
  • Cover with foil and bake in a 350 degree F oven for 25 minutes.
  • Remove foil and sprinkle with more cheese (any amount desired) then return to oven and bake for another 5 minutes or until the cheese has melted.
  • Let stand 10-15 minutes before slicing.
  • Top with sour cream and/or tomatoes, green onions and crushed tortilla chips if desired.

Steps:

  • Preheat the oven to 350 degrees. Prepare rice per instructions. While the rice is cooking heat the olive oil in a large skillet over medium heat. Stir until well combined and cook for an additional 10 minutes or until the beef is cooked through and the onion is tender. Brown rice usually takes about 45 minutes so I'm including that in the cooking time. *If you would like some heat or a chile flavor consider adding tabasco, jalapenos or diced mild green chilies. I just made this with salsa instead of tomatoes and added black pepper. I was very pleased with the results. A simple flavored hearty meal. I'm used to mexican dishes having cumin and it may work with this but I liked it being different and it may appeal to people who don't like cumin. I think black olives and bell pepper would be good in it too. Some people may also want to add layers of cheese but I was really surprised at how good it was without it. To cut down the fat more you could cook the onions with the ground beef and skip the butter.

1 cup brown rice
1 beef bouillon cube
2 tablespoons butter (original has 1/2 cup!) or 2 tablespoons margarine (original has 1/2 cup!)
1 medium onion, thinly sliced
1 lb lean ground beef
1 -2 garlic clove, minced
2 teaspoons dry mustard
1 tablespoon chili powder
1 teaspoon salt (I used garlic salt)
1/2 teaspoon black pepper
1 (15 ounce) can tomatoes, drained (I used jarred mild salsa)
1 (15 ounce) can kidney beans, liquid reserved
1 teaspoon paprika
1/4 cup parmesan cheese, grated

Steps:

  • Cook rice according to package directions, adding bouillon cube to cooking water.
  • When the rice is nearly done, saute onion in butter.
  • Crumble beef and add to onion with garlic, mustard, chili powder, salt and pepper. Cook until meat loses pinkness. Drain grease if needed.
  • Layer half the meat mixture in the bottom of a 2-quart casserole.
  • Spread cooked rice over meat.
  • Spoon tomatoes over rice.
  • Spoon beans with liquid over tomatoes.

  • Bake uncovered at 350F for 30 minutes.

1 lb extra lean ground beef
1 medium onion, chopped
1 can(s) kernal corn, drained
1 can(s) black beanns rinsed and drained
1 can(s) stewed tomatoes, mexican
1 pkg taco seasoning mix
8-12 corn tortillas
3/4 c nonfat sour cream
1/3 c mexican blend shredded cheese
sliced jalapeno peppers, if desired

Steps:

  • 1. Brown ground beef and onions together for about 10 - 12 minutes. Drain. Add corn, beans, tomatoes and taco seasoning. Mix well and simmer for 5 minutes.
  • 2. Spray baking dish (2 quart 8x12 inches) Place half of tortillas in bottom. Spoon half of beef mixture on top, place sour cream over beef. Then layer last tortillas and then beef mixture. Place in heated 350 over and bake for 35 minutes.
  • 3. Remove from oven and sprinkle with cheese and add sliced jalapeno peppers on top. Cook for another 5 minutes or till cheese is melted. Let stand for 5 minutes and serve.

1/2 c shredded cheddar cheese

  • 2. Cook ground beef in 12-inch nonstick skillet over medium-high heat, stirring frequently, until beef is done, about 5 minutes. Remove from heat, then stir in cilantro.
