Tips:

  • Use a clean bowl and whisk when whipping the egg whites. Any grease or residue can prevent the egg whites from whipping up properly.
  • Whip the egg whites gradually, starting on low speed and increasing the speed as the egg whites begin to foam.
  • Add the sugar slowly, a little at a time, while continuing to whip the egg whites. This will help prevent the sugar from crystallizing and will result in a smooth, glossy meringue.
  • Continue whipping the egg whites until they reach stiff peaks. This means that when you lift the whisk out of the bowl, the meringue will hold its shape and won't fall back into the bowl.
  • Pipe the meringue onto a parchment paper-lined baking sheet in whatever shape you desire. For meringue bones, you can use a star tip to create a bone shape.
  • Bake the meringue in a preheated oven at 200°F (93°C) for 1-2 hours, or until the meringue is dry and crisp.
  • Let the meringue cool completely before storing it in an airtight container.
