Disposable aluminum pan
Hickory or Pecan wood chips
4 chicken thighs (see notes)
2.5 tablespoons granulated sugar
2 tablespoons paprika
1 tablespoon salt
1 tablespoon onion powder
2 teaspoons ground chili powder
1 teaspoon ground black pepper

Steps:

  • The night prior, mix all dry rub ingredients in a bowl until it appears uniform. Apply the rub to the chicken thighs and let it rest in the refrigerator overnight.
  • An hour prior to barbecuing, soak the wood chips in water in the aluminum pan.
  • Prepare the grill by dividing the charcoal into two piles on the sides of the charcoal tray, leaving enough room in the center for the aluminum pan to fit.

I've been trying different barbecue chicken recipes and found this one. Personally, I season the chicken with some greek seasoning or salt and pepper before grilling. I also do half skin on and half skin off to satisfy all diners. You can make the sauce ahead of time, or while grilling.

1/2 c butter
1/2 c vinegar
1/4 c cola flavored beverage
1/4 c prepared mustard
1 lemon, sliced
1 Tbsp hot sauce
1 Tbsp commercial steak sauce
1 Tbsp worcestershire sauce
1/4 tsp black pepper
18 chicken pieces, assorted

Steps:

  • 1. Combine all ingredients except chicken in a medium saucepan. Bring to a boil. Reduce heat, and simmer, uncovered, for 1 hour, stirring occasionally.
  • 2. Grill chicken over medium-low coals for 35 minutes, turning occasionally.
  • 3. Baste with sauce; grill an additional 25 minutes or until the chicken is done, basting frequently with the remaining sauce.
