My family loves this recipe. It's such a good all-around dish, either for sandwiches like these or served with hot cooked spaghetti.

8 Italian sausage links (2 pounds)
1 jar (26 ounces) meatless spaghetti sauce
1/2 cup water
1 can (6 ounces) tomato paste
1 large green pepper, thinly sliced
1 large onion, thinly sliced
1 tablespoon grated Parmesan cheese
1 teaspoon dried parsley flakes
8 brat buns, split
Additional Parmesan cheese, optional

Steps:

  • Place sausages in a large skillet; cover with water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until a thermometer reads 160°; drain well. , Meanwhile, in a 3-qt. slow cooker, combine the spaghetti sauce, water, tomato paste, green pepper, onion, cheese and parsley. Add sausages. Cover and cook on low 4-5 hours or until vegetables are tender. Serve in buns. Sprinkle with additional cheese if desired.

This is one of those "I can't make just a little bit" recipes. I make extra meatballs & freeze them for meatball subs or meatballs & bowties, the list is endless. However, this recipe can certainly be halved if you don't care to make so many.

2 lb ground beef
19 oz package, sweet italian sausage
2 Tbsp ketsup
2 Tbsp worchestshire sauce
1 Tbsp garlic powder, onion powder, basil, italian seasoning
1 tsp black pepper
2 Tbsp olive oil
2 eggs
1 c finely crushed crackers
1/2 c parmeasan

Steps:

  • 1. In a large bowl, crumble ground beef & italian sausage.
  • 2. In small bowl mix together, garlic pwd., onion pwd., pepper, tomato & basil, italian seasoning.
  • 3. In another small bowl mix together ketchup, worcestershire sauce, olive oil, & eggs.
  • 4. Add dry ingredients including crackers to meat, mix slightly, add wet ingredients, mix by hand until well incorporated.
  • 5. Roll up meatballs & place on baker's rack. I used a teaspoon as a guide for these. Bake (small) meatballs on 325* for 30 minutes.
  • 6. I then place meatballs in my Meatless Spagetti Sauce & simmer for 30 minutes.

⅔ cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
½ teaspoon rubbed sage
½ cup sliced fresh mushrooms
1 ½ pounds ground beef
¼ cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
½ teaspoon Worcestershire sauce

Steps:

  • Combine eggs, milk, bread crumbs, onion, salt, sage, and mushrooms in a large bowl. Crumble ground beef over mixture and stir well to combine. Shape into a round loaf; place in a 5-quart slow cooker. Cover and cook on Low until a meat thermometer reads 160 degrees F (71 degrees C), 5 to 6 hours.
  • Whisk ketchup, brown sugar, mustard, and Worcestershire sauce in a small bowl; spoon sauce over meat loaf. Return to slow cooker and cook on Low until heated through, about 15 minutes. Let stand 10 minutes before cutting.

2 lbs Italian sausage (sweet, mild or hot)
48 ounces spaghetti sauce
1 (6 ounce) can tomato paste
1 large green pepper, sliced thin
1 large onion, sliced thin
1 tablespoon parmesan cheese, grated
1 teaspoon parsley flakes
1 cup water
2 -3 tablespoons italian seasoning (optional)

Steps:

  • Put sausage in skillet and pour water over top. Simmer about 10 minutes. Drain (I rinse too).
  • Put all other ingredients in crock pot then add sausage, push down to cover. You can cut sausage into smaller pieces if you want, I don't.
  • Cover - cook on low 6-8 hours.
  • Serve on rolls.
  • I use the left overs for spaghetti sauce later in the week.
  • Sometimes I also add ground beef crumbles or meatballs.
