2 large eggs
3/4 cup 2% milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1-1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

I can't take credit for this recipe. It came from one of my Taste of Home magazine years ago. I can say that it is truly the easiest and best meatloaf EVER! The texture is perfect for sandwiches the next day, and the sauce adds a slight sweetness you don't get from the typical plain ketchup on the top. My picky daughter loves it, which says a LOT She hates finding chunks of onions or peppers in meatloaf and this recipe solves that beautifully. Oh, and it doubles wonderfully if you have a larger crockpot. Use tin foil strips to aid in removal. ENJOY!!

I USUALLY DOUBLE THIS TOPPING PART SO THAT IT COVERS THE WHOLE MEATLOAF - IT'S ALL IN WHAT YOU PREFER. THIS IS NOT THE DOUBLED RECIPE.
1/4 c ketchup
2 Tbsp brown sugar
1 tsp ground mustard
1/2 tsp worcestershire sauce
MEATLOAF MIXTURE
2 eggs
3/4 c milk
2/3 c bread crumbs, seasone
1/2 c mushroom pieces
1 pkg lipton beefy onion soup mix
1-1/2 lb ground beef
COMBINE EGGS, MILK, BREAD CRUMBS, LIPTON BEEFY ONION SOUP, & MUSHROOMS IN A LARGE BOWL. CRUMBLE GROUND BEEF OVER MIXTURE AND STIR WELL TO COMBINE. SHAPE INTO A ROUND LOAF; PLACE IN A 5-QUART SLOW COOKER. COVER & COOK ON LOW 5-6 HOURS.
I USUALLY USE 3 LBS. OF GROUND BEEF SO I WILL DOUBLE THIS RECIPE. THE RECIPE I POSTED IS NOT THE DOUBLED VERSION. THE COOKING TIME I ADD AN EXTRA HOUR.

Steps:

  • 1. MEAT LOAF MIXTURE: Combine eggs, milk, bread crumbs, beefy lipton onion soup, mushrooms in a large bowl. Crumble ground beef over mixture and stir well to combine. Shape into a round loaf; place in a 5-quart slow cooker. Cover and cook on Low for 5 to 6 hours. Grease from the ground beef will accumulate at the bottom of your slow cooker & there is NO need to add liquid and/or grease your slow cooker prior to placing the meatloaf in the slower cooker I have made this many times and have NEVER had a problem with it scorching and/or burning @ the bottom or on the sides. I do, however, pull it out of my slow cooker about a 1/2 prior to it being served . . . add the sauce (topping) and place it in 13x9 pan to help dry it out a bit from the grease and add the sauce and DO NOT cover it. I NEVER have leftovers & this is the best the meatloaf recipe I have come across and wanted to sharted. I also always double the sauce that goes on top and I do use 3 lbs. of ground beef so I just doulbe that part of the recipel
  • 2. TOPPING FOR MEATLOAF: Whisk ketchup, brown sugar, ground mustard, and Worcestershire sauce in a small bowl; spoon sauce over meatloaf. Return to slow cooker and cook on Low until heated through, about 15 minutes. Let stand 10 minutes before cutting. I DO PULL MY MEATLOAF OUT & put in a 13x9 & then put this sauce on. I usually put it in the oven for 30 mins. @ 350 degrees to dry it out just a bit UNCOVERED ... You WILL NOT be disappointed!!
