1 ⁄2 cup butter, or margarine
1 ⁄2 cup white sugar
1 ⁄4 teaspoon salt
1 teaspoon vanilla extract
2 egg yolk
1 1⁄2 cup all-purpose flour
1 teaspoon baking powder
1 ⁄3 cup milk
2 egg white
1 ⁄4 cup white sugar
1 1⁄2 cup fresh blueberries
1 tablespoon all-purpose flour
1 tablespoon white sugar

Steps:

  • Preheat oven to 350°F. Grease and flour an 8-inch square pan. Cream butter or margarine and 1/2 cup sugar until fluffy. Add salt, vanilla extract, and egg yolks to the sugar mixture; beat until creamy. Combine 1 1/2 cups flour and baking powder; add alternately with milk to egg yolk mixture. Coat blueberries with 1 tablespoon flour and add to batter. In a separate bowl, beat egg whites until soft peaks form. Add 1/4 cup of sugar, 1 tablespoon at a time, and beat until stiff peaks form. Fold egg whites into the batter. Pour into prepared pan. Sprinkle the top with remaining 1 tablespoon sugar. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.

2 eggs seperated
1/2 c crisco
1 tsp vanilla
1 1/2 c sifted flour
1 tsp baking powder
1 c sugar
1/4 tsp salt
1/3 c sweetened condensed milk
1 1/2 c blueberries

Steps:

  • 1. Beat egg white until fluffy. Add 1/4 cup of sugar and set aside.
  • 2. Cream shortening, vanilla, salt, remaining sugar and and egg yolks. Beat until fluffy.
  • 3. Sift flour and baking powder, add to creamed mixture and 1/3 cup sweetened condensed milk.
  • 4. Fold in egg whites. Dust blueberries with flour and gently fold in as well.
  • 5. Gentley put in pan, I use 13X9" and sprinkle with sugar.
  • 6. Bake at 350 for about 50 minutes or until done. Do not overbake!

1 cup sugar
1/4 teaspoon salt
1/2 cup shortening
1 teaspoon vanilla
1 1/2 cups all-purpose flour, sifted
1 teaspoon baking powder
1/3 cup milk
1 1/2 cups blueberries

Steps:

  • Beat egg whites until stiff. Add 1/2 cup of the sugar to keep them stiff.
  • Cream shorting; add salt and vanilla.
  • Add remaining sugar gradually.
  • Add unbeaten egg yolks and beat until light and creamy.
  • Add sifted dry ingredients alternately with milk.
  • Fold in beaten egg whites.
  • Fold in fresh blueberries (use a bit of the flour in recipe to roll the blueberries so they don't settle).
