SWEET POTATO PIE

Sweet Potato Pie image

Custardy and classic, this easy pie shows off the earthy richness of sweet potatoes with a little butter and a blend of warming spices. Be sure to start with good-looking spuds-firm and speckle-free. As they bake, they'll caramelize a bit. Because sweet potatoes vary in sweetness, I have you taste the filling before beating in the eggs to see if you want a touch more sugar.

Time 5h

Yield one 9-inch pie

Number Of Ingredients 15

2 pounds sweet potatoes
1 disk Carla's Classic Pie Dough, fitted into a deep-dish pie plate and frozen, recipe follows
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon salt
5 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar, plus more if needed
1 cup evaporated milk
2 large eggs
1 tablespoon sugar
1/2 teaspoon table salt
2 1/4 cups all-purpose flour, plus more for rolling
1 cup (8 ounces) cold unsalted butter, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the sweet potatoes on a foil-lined half-sheet pan. Bake, turning once, until very tender, 1 1/2 to 2 hours. When cool enough to handle, take the sweet potatoes out of their jackets and scrape the flesh into a 1-quart measuring cup. You should have 2 1/2 cups packed sweet potato.
  • Raise the oven temperature to 425 degrees F.
  • Line the frozen dough with foil and fill with pie weights. Bake until dry and set, about 25 minutes. Remove the foil with the weights and bake the dough until golden brown, about 5 minutes longer. Let cool completely, then place on a half-sheet pan.
  • Transfer the sweet potato to a large bowl and add the cinnamon, ginger, allspice, nutmeg, salt, butter, brown sugar, and the evaporated milk. Beat with a heavy whisk until smooth. Taste and add more brown sugar if you'd like. The amount will depend on the sweetness of your spuds. Add the eggs and whisk until fully incorporated. Pour into the pie crust and spread evenly.
  • Bake for 15 minutes, then reduce the oven temperature to 350 degrees F. Bake until the top is golden brown and the filling has puffed and set, about 40 minutes. If the crust browns too quickly, cover it with foil and continue baking. Let cool completely on a wire rack.
  • Dissolve the sugar and salt in 1/3 cup water and chill until cold.
  • Pulse the flour and butter in a stand mixer until the mixture looks like coarse meal with some pea-size pieces. Add the water all at once and mix until the dough almost forms a ball. Divide the dough in half and flatten into two disks.
  • Wrap each disk tightly in plastic wrap and chill until firm, at least 30 minutes or up to 3 days. You can freeze the dough for up to 3 months. Thaw overnight in the refrigerator before rolling.

EGGNOG SWEET POTATO PIE RECIPE - (4.3/5)

Eggnog Sweet Potato Pie Recipe - (4.3/5) image

Provided by á-43609

Number Of Ingredients 14

1 1/2 pounds Red Sweet Potatoes or Yams
3/4 cup Eggnog
2 Eggs
1 1/2 cups Dark Brown Sugar
4 tablespoons Butter (melted)
5 teaspoons Vanilla Extract
1 teaspoon Cinnamon
1/2 teaspoon Allspice
1/4 teaspoon Nutmeg
2 tablespoons Maple Syrup
1 ounce Brandy
1/2 Lemon (juiced)
1/2 teaspoon Salt
1 Premade Pie Dough

Steps:

  • Preheat oven to 350 F. Line a pie dish with the pie dough and crimp edges. Place sweet potatoes in a stock pot and cover with water by at least 2 inches. Bring to a boil and cook for 20 minutes or until very tender. Drain and allow to cool before handling. Peel and discard skins. Place the sweet potatoes in a large bowl and break up and mash using a spoon. Begin adding the remaining ingredients, mixing as you add until well combined. Use either a very stiff whisk or an immersion blender to create a very smooth batter. Adjust to taste. Transfer batter to the prepared pie crust and bake for 40 to 50 minutes. Remove from oven and allow to cool on a wire rack. Once cooled place in the fridge and chill. Pie can be made a few days in advance and kept covered in the fridge.

Tips:

  • Use fresh sweet potatoes for the best flavor and texture. Look for firm, smooth potatoes without any blemishes or bruises.
  • Prick the sweet potatoes with a fork before baking. This will help them cook evenly.
  • Bake the sweet potatoes until they are tender. You can test this by inserting a knife into the center of a potato. If the knife slides in easily, the potato is done.
  • Let the sweet potatoes cool slightly before handling them. This will prevent them from breaking apart.
  • Use a food processor or blender to puree the sweet potatoes until they are smooth. If you don't have a food processor or blender, you can mash the sweet potatoes by hand.
  • Add the eggnog, sugar, spices, and vanilla extract to the sweet potato puree and mix until well combined.
  • Pour the sweet potato mixture into a pie crust and bake until the filling is set. You can test this by inserting a knife into the center of the pie. If the knife comes out clean, the pie is done.
  • Let the pie cool completely before serving. This will allow the flavors to meld and the pie to firm up.

Conclusion:

Mellina's Eggnog Sweet Potato Pie is a delicious and unique holiday dessert. The combination of sweet potatoes, eggnog, and spices creates a rich and flavorful pie that is sure to be a hit with your family and friends. This pie is also relatively easy to make, so it's perfect for busy holiday bakers.
