This recipe was given me by my Cousin and is by far my favorite recipe for broccoli casserole. Pure comfort food!

1 large head fresh broccoli
10 1/2 oz can crem of mushroom soup
1 c mayo
2 eggs, beaten
1 c shredded sharp cheddar cheese
20 ritz crackers, crushed

Steps:

  • 1. Steam the broccoli until nice and tender, chop florets into small pieces.
  • 2. Place the broccoli in a large bowl and add in the remaining ingredients. Stir well to combine.
  • 3. Bake at 350 degrees for 1 hour.

5 boneless skinless chicken thighs or breast
1 pkg large frozen bag broccoli cuts
1 c mayo
1 can(s) large campbells cream mushroom soup
1 c cheddar cheese (grated)
1 pinch salt and pepper

Steps:

  • 1. Boil chicken in water until done. chop chicken in pieces and put in 13 x 9 pan pour frozen broccoli over the chicken In a med. size bowl; mix cheese, mayo, soup, salt and pepper to taste. spread mix over the broccoli. (creating layer after layer) cover with foil bake 45 mins. 350 degrees sprinkle cheese on top of mix and bake for another 15 mins (uncovered)

Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
ΒΌ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.
