Time 45m

Number Of Ingredients 14

1 lb eggplant (about 2 medium )
1 tsp kosher salt
1 large sweet onion
1/2 lb zucchini (about 3 medium )
1 lb tomatoes (I like Roma tomatoes for this. About 5.)
2 cloves garlic - minced
3/4 C extra virgin olive oil
3/4 tsp oregano (dried)
3/4 tsp basil (dried)
1/2 tsp kosher salt
1/4 tsp pepper (freshly ground tastes best)
1 package pie crust (store-bought or homemade)
1/2 C grated parmesan cheese
2 C shredded mozzarella

Steps:

  • Preheat oven to 425° F.
  • Prep the eggplant by cutting 1/2 inch off both ends. Then slice all the skin off and cut in 1/2 inch rounds.
  • Place rounds on paper towels and sprinkle 1 tsp salt evenly over top. Place another layer of paper towels on top of slices and place something heavy on top to help absorb the moisture. I used my cutting board and then put a couple bowls on top.
  • Leave eggplant for 30 minutes and let the paper towels soak up as much moisture as possible.
  • While eggplant is resting, dice onion, garlic and zucchini into 1/4" pieces.
  • When eggplant is done resting, dice into 1/4" cubes.
  • Heat olive oil in skillet on medium heat. Add eggplant, zucchini, onion and minced garlic. Cook, stirring often, until tender (about 5 minutes). Set aside.
  • Combine oregano, basil, remaining salt and pepper in small bowl. Set aside.
  • Chop the tomatoes into 1/2" pieces, removing the seeds and as much wet stuff as you can.
  • Lay 1 crust into pie dish. Add 1/2 the vegetables and 1/2 the tomatoes. Sprinkle with 1/2 the herbs and 1/2 the parmesan and mozzarella cheeses.
  • Repeat layers.
  • Place second pie crust on top and crimp edges so the pie crusts are sealed around the edges. For a dark and shiny crust, brush with 1 egg yolk and then sprinkle with parmesan.
  • Place in the center of the oven for 25-35 minutes.
  • Once pie crust is fully cooked and pie is heated through, remove from oven and allow to rest 5 minutes before slicing. Best enjoyed with a crusty french bread to soak up the vegetable juices!

WHOLE WHEAT MEDITERRANEAN PIE CRUST

Whole Wheat Mediterranean Pie Crust image

This is a whole wheat version of the crust I learned to make from Diane Kochilas at her cooking school in Ikaria.

Provided by Martha Rose Shulman

Categories     project

Time 1h15m

Yield Enough for two 9- or 10-inch tarts

Number Of Ingredients 6

200 grams (approximately 1 3/4 cups) whole wheat flour or whole wheat pastry flour
115 grams (approximately 1 cup) unbleached all purpose flour
5 grams (approximately 3/4 teaspoon) salt
50 grams (1/4 cup) extra virgin olive oil
165 grams (3/4 cup) water
10 grams (2 teaspoons) red wine vinegar or strained lemon juice

Steps:

  • In a large bowl or in the bowl of a standing mixer fitted with the paddle or a food processor fitted with the steel blade, combine the flours and salt and mix together. If using a bowl, make a well in the center, add the olive oil and mix in with a fork. If using a mixer or food processor, turn on and add the olive oil. When it is evenly distributed through the flour combine the water and vinegar or lemon juice and add it to the flour mixture with the machine running. The dough should come together in a ball.
  • Turn out the dough onto a lightly floured work surface, flour your hands and work the dough just until smooth and easy to shape into a ball. Do not overwork it or you will develop the gluten in the flour and the dough will be tough. Divide the dough in half, shape each half into a ball and press into a 1/2-inch thick circle. Wrap in plastic and let rest for 1 hour.
  • Roll out the dough as needed for savory tarts, dusting your work surface and the top of the dough with flour to prevent it from sticking. Pre-bake and bake as directed in recipes calling for the crust.

  • Brush lattice strips with water; sprinkle with remaining parmesan.
  • Bake at 425 degrees F.
  • for 25 minutes or until pastry is golden brown and pie just begins to bubble.
  • Let stand 15 minutes before serving.

Tips:

  • Prepare the phyllo dough in advance: Phyllo dough can be tricky to work with, so it's best to let it thaw in the refrigerator overnight before using it. This will make it more pliable and less likely to tear.
  • Use a sharp knife to cut the phyllo dough: A sharp knife will help you to get clean, even cuts in the dough. This will make it easier to assemble the pie and prevent the dough from tearing.
  • Don't overfill the pie: The filling should be about 1-inch thick. If you overfill the pie, it will be difficult to close and the filling may spill out.
  • Bake the pie until the top is golden brown: The pie should be baked for about 30-35 minutes, or until the top is golden brown. Keep an eye on the pie to make sure that it doesn't overcook.
  • Let the pie cool before slicing: The pie should be allowed to cool for at least 15 minutes before slicing. This will help the filling to set and prevent it from falling apart.

Conclusion:

This Mediterranean vegetable and cheese pie is a delicious and easy-to-make dish that is perfect for any occasion. The combination of vegetables, cheese, and phyllo dough creates a flavorful and satisfying dish that is sure to please everyone at the table. With these tips, you can easily make this pie at home and enjoy a taste of the Mediterranean in your own kitchen.
