1/2 large onion, 1 cup chopped
4 large cloves garlic, about 2 TBSP chopped
1 TBSP salt
2 tsp pepper
3 lbs roma tomatoes, 8 cups chopped
4 1/2 cups vegetable stock
1 TBSP balsamic vinegar

1/2 cup fresh basil - chopped
1 cup cream
3 TBSP cornstarch

We'd say this is more of a tomato soup than a bisque but it's delicious. It's so easy to make without any real prep work. Buttermilk adds a wonderfully rich flavor and texture to the tomato soup. Perfect if you are feeling under the weather or just want to sit on your couch with a cozy blanket. Bring on the grilled cheese!

Tips:

  • Use ripe, flavorful tomatoes. This will give your bisque the best possible flavor. Look for tomatoes that are deep red and free of blemishes.
  • Roast the tomatoes before using them. This will concentrate their flavor and make them even more delicious. To roast the tomatoes, simply place them on a baking sheet and drizzle them with olive oil. Roast them in a preheated oven at 400 degrees Fahrenheit for 30-40 minutes, or until they are softened and caramelized.
  • Use a good quality vegetable broth. This will also help to give your bisque a delicious flavor. Look for vegetable broths that are made with fresh vegetables and herbs.
  • Add some fresh basil to the bisque. This will give it a bright, herbaceous flavor. You can add the basil at the end of the cooking process, or you can stir it in just before serving.
  • Serve the bisque with a dollop of sour cream or yogurt. This will add a creamy, tangy flavor to the bisque. You can also serve it with a sprinkling of grated Parmesan cheese.

Conclusion:

Mediterranean Tomato Basil Bisque is a delicious and easy-to-make soup that is perfect for any occasion. It is made with fresh, flavorful ingredients and is packed with nutrients. This soup is also a great way to use up leftover tomatoes. So next time you have a few extra tomatoes on hand, give this recipe a try. You won't be disappointed!
