¼ cup sour cream
1 (4 ounce) container crumbled feta cheese
2 teaspoons garlic powder
2 teaspoons dried dill weed

1/2 cup feta cheese, crumbled (about 2 oz)
3 tablespoons chopped kalamata olives
2 tablespoons chopped sun-dried tomatoes packed in oil
1 -2 clove garlic, minced
3 tablespoons chopped fresh basil

  • Combine all ingredients, cover and chill at least 1 hour or up to 24 hours.

This is my own creation inspired by, if not entirely true to, the cuisines of the Southern Mediterranean which I love. Use it as a dip, spread it on any type of toasted bread. I've used it on grilled steak to good advantage. You'll get 16 servings of 1 Tbsp each.

6 ounces goat cheese (chevre)
3 tablespoons whipping cream
1/4 cup mixed fresh herbs (parsley, thyme, mint , cilantro leaves,snipped, 1/4 cup in total NOT each. * Please see below)
1 small shallot, minced
2 teaspoons finely shredded fresh lemon peel
1 garlic clove, minced
sea salt
fresh ground black pepper

Steps:

  • In a medium bowl crumble goat cheese. Meanwhile in a small chilled bowl, whip cream until thickened only and stir into goat cheese.
  • Stir in herbs, shallot, lemon peel, and garlic. Season to taste with sea salt and pepper. Thin with additional cream, if desired. Serve on toasted pita wedges, Syrian bread or anything you wish.
  • * 1/4 cup in total. Mix the herb amounts to your preference but you might want to make the parsley the main herb with smaller amounts of the remaining 3.

1 cup canned garbanzo beans, drained (reserve liquid)
1/2 cup walnuts, chopped
1/2 cup fresh basil leaf, lightly packed
2 tablespoons olive oil
2 -3 teaspoons fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Drain garbanzo beans, reserving the liquid. In a blender or food processor bowl combine beans and 2 tablespoons of the reserved liquid, the walnuts, basil leaves, olive oil, lemon juice, salt and pepper. Cover and blend until nearly smooth (scrap down sides and add additional reserved liquid if mixture appears stiff).
  • Serve on toasted baguette slices or pita slices. Store, covered, in the refrigerator up to 5 days. Makes about 20 (1 tablespoon) servings.

3 cloves garlic, minced

1/2 cup chopped green bell pepper or sliced pitted black olives
1 package Keebler® Wheatables® Original wheat cracker

Steps:

  • 1. Drain any excess oil from pesto. Set aside. In food processor or blender combine beans, olive oil and garlic. Process until smooth.2. Spread half of bean mixture in 9-inch pie plate or quiche dish. Carefully spread pesto over bean mixture in dish. Top with remaining bean mixture. Sprinkle with tomato, feta cheese and pepper or olives. Serve with crackers.
