Yield 2 Servings; Can Be Doubled

Number Of Ingredients 10

2 tablespoons olive oil
2 large garlic cloves, chopped
3 cups canned vegetable broth
1 cup lentils, rinsed, picked over
8 ounces red-skinned potatoes, cut into 1/2-inch pieces
1 lemon
6 ounces torn fresh spinach leaves (about 8 cups)
1/4 teaspoon cayenne pepper
1/4 cup chopped fresh mint
Crumbled feta cheese (optional)

Steps:

  • Heat olive oil in heavy large saucepan over medium heat. Add garlic and stir 30 seconds. Add vegetable broth and lentils; bring to boil. Reduce heat, cover and simmer 10 minutes. Add potatoes; cook uncovered until potatoes and lentils are tender, stirring occasionally, about 15 minutes.
  • Meanwhile, grate 1/2 teaspoon peel from lemon; squeeze enough juice from lemon to measure 2 tablespoons. Add lemon peel, lemon juice, spinach and cayenne to stew. Cover and simmer stew until spinach wilts and is cooked through, about 2 minutes. Mix in mint. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before serving.)
  • Spoon stew into large soup bowls. Sprinkle feta cheese over, if desired.

Tips:

  • Use fresh ingredients: Fresh vegetables, herbs, and spices will give your soup the best flavor. If you can, buy your ingredients from a farmers market or local grocery store.
  • Don't overcrowd the pot: If you add too many ingredients to the pot, the soup will be thin and watery. Add the ingredients in batches, and cook them until they are tender before adding the next batch.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop. The longer you simmer the soup, the better it will taste.
  • Season the soup to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of yogurt to brighten up the flavor.
  • Serve the soup with a variety of toppings: Some popular toppings for Mediterranean spinach and potato soup include croutons, crumbled feta cheese, and chopped fresh herbs.

Conclusion:

Mediterranean spinach and potato soup is a delicious and healthy soup that is perfect for a cold winter day. It is also a great way to use up leftover vegetables. With a few simple ingredients and a little time, you can make a delicious and satisfying soup that the whole family will enjoy.
