1 tsp. kosher salt, plus more for seasoning
12 oz. orzo
1/2 c. olive oil
1/4 c. white wine vinegar
1 tsp. dried oregano
2 garlic cloves, minced
Black pepper, to taste
2 c. cherry tomatoes, halved
1 c. pitted kalamata olives, halved
1 c. crumbled feta cheese, plus more for garnish
1/2 c. fresh basil, chopped, plus more for garnish
1 15-ounce can chickpeas, drained and rinsed
1/2 small red onion, diced
1 1/2 lb. peeled and deveined large shrimp

Steps:

  • Bring a large pot of generously salted water to a boil. Add the orzo and cook according to the package directions for al dente. Drain and rinse under cold water until cool. Place in a large bowl; set aside.
  • Meanwhile, for the dressing: Whisk the olive oil, vinegar, oregano, garlic, salt and a few grinds of pepper in a medium bowl until combined.
  • Add the tomatoes, olives, feta, basil, chickpeas and onion to the orzo. Drizzle in all but 2 tablespoons of the dressing and stir to combine. Refrigerate for at least 1 hour or overnight.
  • Toss the shrimp in a bowl with the reserved 2 tablespoons dressing and set aside to marinate for 10 minutes. Meanwhile, soak 6 wooden skewers in water to prevent them from scorching.
  • Preheat the broiler. Thread the shrimp on the skewers, season with salt and place on a baking sheet. Broil for 2 minutes, then flip the skewers and broil until the shrimp is pink and cooked through, about 1 more minute. Top the orzo mixture with the shrimp and more feta and basil.

1 medium onion, chopped

3 medium carrots, diced
1 ear fresh corn, kernels cut from cob
1 stalk celery, halved and diced
6 cups chicken stock (such as Swanson®)
1 (10 ounce) can diced tomatoes with green chile peppers
1 (10 ounce) can diced tomatoes with green chile peppers, lime, and cilantro (such as RO*TEL®)
1 ancho chile pepper, diced
1 tablespoon chili powder
2 teaspoons ground cumin
1 pound fresh littleneck clams
1 pound fresh mussels
1 pound fresh cod, cut into bite-sized pieces
¾ pound fresh shrimp, peeled and deveined
¼ cup fresh cilantro, chopped, or to taste
1 avocado, peeled and sliced

Steps:

  • Heat olive oil in a stockpot over medium heat. Add onion and cook until translucent, 5 to 7 minutes. Add garlic and cook until fragrant, about 1 minute.

3/4 pound boneless skinless chicken breasts, cubed
2 celery ribs, chopped
2 medium carrots, chopped
1 small onion, chopped
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1/4 cup white wine or additional reduced-sodium chicken broth
1 carton (32 ounces) reduced-sodium chicken broth
1 teaspoon minced fresh rosemary
1 bay leaf
1 cup uncooked whole wheat orzo pasta
1 teaspoon grated lemon zest
1 tablespoon lemon juice
Minced fresh parsley, optional

Steps:

  • In a large saucepan, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 6-8 minutes or until no longer pink. Remove from pan., In same pan, heat remaining oil over medium-high heat. Add vegetables, salt, oregano and pepper; cook and stir 4-6 minutes or until vegetables are crisp-tender. 1 1/2 lbs halibut, cut into 1-inch cubes
3 tablespoons fresh lemon juice
4 teaspoons olive oil, plus
1/4 cup olive oil
2 large onions, halved and thinly sliced
1 (28 ounce) can Italian plum tomatoes, drained
4 (8 ounce) bottles clam juice
1 1/2 cups dry white wine
1 bay leaf
orange rind, cut into 2 1 x 4-inch strips
1/4 teaspoon fennel seed, crushed
1/4 teaspoon dried crushed red pepper flakes
1 cup orzo pasta
2 lbs fresh clams, well scrubbed or 2 (10 ounce) cans baby clams, drained
minced fresh parsley

Steps:

  • Mix halibut, lemon juice and 4 teaspoons oil in a medium bowl.
  • Let mixture stand while preparing soup.
  • Heat 1/4 cup oil in a heavy large saucepan over medium heat.

I use 8 large onions for this recipe, one more won't hurt, also the onions must be caramalized for this soup, just softening will not do! You can add in some dry white wine if desired.

3 tablespoons sugar
3 tablespoons chopped fresh garlic (or to taste)

2 tablespoons olive oil
3 tablespoons butter

  • Add in the broth, undrained tomatoes, tomato sauce and bay leaf; bring to a boil and simmer for about 45 minutes on low heat, adding in the orzo the last 10-15 minutes of simmering; cook until the pasta is tender.
  • Season with salt and lots black pepper.
  • Ladle into bowl, then top with croutons, then sprinkle with Parmesan cheese or Swiss cheese.
