This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

Tips:

  • Choose the right pasta. Short pasta shapes like penne, rotini, or bow-tie pasta are ideal for this salad because they hold the dressing well. Avoid using long pasta shapes like spaghetti or angel hair pasta, as they can be difficult to eat in a salad.
  • Cook the pasta al dente. This means cooking the pasta until it is just tender but still has a slight bite to it. Overcooked pasta will be mushy and won't hold its shape well in the salad.
  • Use a flavorful dressing. The dressing is what brings all the flavors together in this salad, so make sure it's flavorful and well-balanced. A good Mediterranean-inspired dressing will use olive oil, vinegar, herbs, and spices.
  • Don't be afraid to add vegetables. This salad is a great way to get your daily dose of vegetables. Add your favorite vegetables, such as tomatoes, cucumbers, bell peppers, or zucchini.
  • Make it a complete meal. This salad can be served as a main course or a side dish. If you're serving it as a main course, add some grilled chicken, fish, or shrimp.

Conclusion:

Mediterranean salmon pasta salad is a delicious and healthy meal that's perfect for summer. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a light and refreshing meal, give this Mediterranean salmon pasta salad a try.
