1/2 teaspoon salt, divided
1/2 cup olive oil
2 tablespoons balsamic vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
3 plum tomatoes, chopped
1/4 cup chopped red onion
1/4 cup chopped green pepper
2 tablespoons chopped pitted green olives
2 tablespoons chopped ripe olives

  • Place salmon in a greased 15x10x1-in. baking pan; sprinkle with 1/4 teaspoon salt. In a small bowl, whisk the oil, vinegar, honey, mustard and remaining salt. 1 (1 pint) container cherry tomatoes, halved or 1 (14 ounce) can stewed tomatoes
2/3 cup kalamata olive, chopped
3 tablespoons capers, well-drained
3 tablespoons red wine (omit if using canned tomatoes)
3 -4 cloves garlic, minced
1 teaspoon chopped fresh thyme
1 bay leaf
1/2 teaspoon crushed red pepper flakes
4 salmon steaks, rinsed and patted dry
sea salt
fresh ground black pepper, to taste
