This is my version of a fabulous pizza I had at the Flatbread Pizza Company. It's one of my absolute favorites and I even make it on the grill when it gets too hot to turn on the oven in the summertime. It also makes a great appetizer if sliced into small pieces. Using the combination of the non stick foil and the oven rack ensures a crispy crust that wont get stuck to the pan.

- Line a large edgeless pan or pizza stone with non stick foil.
- Stretch out pizza dough.

- Preheat oven to 400 degrees. Drizzle the pepper infused olive oil over the flatbreads and bake at the top of the oven on a baking sheet for 4 minutes. Meanwhile combine the four cheeses in a bowl. Remove flatbreads from oven and place half of the cheese combination on each. Make sure that it is evenely distibuted over the flatbreads. - Position rack in center of oven. Place baking sheet on rack. Preheat oven to 400°F. for 30 minutes.
- Meanwhile, puree garbanzo beans, 2 ounces cheese, garlic, 1 tablespoon olive oil and cumin in processor until smooth. Season with cayenne pepper and salt and pepper to taste. Transfer puree to small bowl. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Heat 1 tablespoon olive oil in heavy medium skillet over medium heat. Add lamb and sauté until cooked through and brown, breaking up with fork, about 5 minutes. Drain all fat from skillet. Season lamb with allspice, oregano and salt and pepper.
- Brush bottom side of 1 pita round with olive oil. Place on work surface, oil side down. Blend 1/4 cup bean puree with 1/4 (about 1/2 cup scant) of lamb mixture. Spread on pita. Sprinkle 1 ounce (about 1/4 cup) cheese over. Sprinkle 1/4 of chopped red pepper over. Repeat with remaining pita rounds. Using spatula, transfer pizzas to hot baking sheet.
- Bake until cheese melts and crust is crispy, about 12 minutes. Sprinkle each pizza with 1 1/2 tablespoons mint.
MEDITERRANEAN PIZZA
This is a bit different than your traditional pizza but it is super tasty. I always add a tin of anchovy fillets apprz 8 filets to the tin) but that's up to you - It does make you thirsty!!! If you want the best thin crust ready made get a "Boboli "- fantastic. Use the oil from the anchovies (if using) to saute the onions & green peppers. You may also use sundried tomatoes in oil just drain well (I like these). Enjoy

- Place oven rack on second from the bottom rung.
- Preheat oven to 475ƒ.
- Take out your pizza stone or pizza pan.
- Soak the dry sundried tomatoes in boiling hot water for 5 min, drain and coarsely chop (if using Sun dried in oil just drain well & chop) Saute the onion in the 3/4 tsp of oil for 3 minutes. Add the chopped peppers for another 2 minutes
- If your pizza is unbaked prick it with a fork and place on pizza stone or pan- bake for 5 minutes at 475, remove from oven. If you are using a Boboli or other baked ready crust it is ready to build your pizza. When your crust is ready evenly distribute the Sundried tomatoes on the shell , then the sauted onions green pepper , add capers. olives and top with the crumbled feta, If using anchovies (I recommend you do) place them so you have an anchovy per slice. Decorate with sliced olives some pimento or what ever you have on hand
- Bake until the edges are brown and the Feta is soft and browning apprx 20 min - but watch it!
