This delicious blend of many robust ingredients will explode with flavor in your mouth. This was one of those nights where we sort of just opened the fridge to see what we had and this is what we ended up with. You can adjust any ingredients to suit your tastes. I used another couple cloves of garlic because our household loves it. You could easily add chicken to this dish as well. Enjoy!

1 (1 pound) package whole wheat penne pasta
⅓ cup olive oil
4 large cloves garlic, pressed
1 (8 ounce) jar marinated artichoke hearts, drained
7 pickled red peppers (such as Peppadew®), cut into strips
¼ cup pitted Kalamata olives, quartered
2 cups fresh spinach leaves
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 8 minutes; drain.
  • Heat olive oil in a large nonstick skillet over medium heat and cook and stir garlic in the hot oil just until fragrant, about 30 seconds. Stir artichoke hearts, peppers, and olives into the skillet until flavors are blended, about 5 minutes. Gently fold the spinach into the mixture and stir just until slightly wilted and dark green.
  • Remove from heat and stir in penne pasta until thoroughly combined; lightly toss pasta mixture with feta cheese. Place a lid over the skillet and let the pasta and vegetables steam for 10 minutes before serving.

1 cup frozen cut green beans, thawed
1 cup cherry tomatoes, halved
3/4 teaspoon coarsely ground pepper
1/3 cup reduced-fat creamy Caesar salad dressing
3 tablespoons shredded Parmesan cheese

Steps:

16 ounces capellini pasta, cooked and tossed with olive oil while warm (substitute angle hair)
1 1/2 lbs boneless skinless chicken breasts, cut into bite sized pieces
2 tablespoons minced garlic (I used SpiceWorld Minced Garlic in Extra Virgin Olive Oil)
2 ounces extra virgin olive oil
14 ounces canned quartered artichoke hearts (I cut each quarter in half for smaller pieces)
6 ounces black kalamata olives, halves
2 ounces white wine
1 tablespoon pesto sauce
3 ounces fresh Baby Spinach
1/2 cup fresh basil, chopped
1/4 cup feta cheese, reduced fat, crumbled
salt, and or freshly ground pepper

Steps:

  • Pasta cooking directions:.
  • 1. Bring water to a boil and add capellini/angle hair pasta.
  • 2. Reduce heat and cover until pasta is cooked.
  • 3. Drain and toss with 1 ounce extra virgin olive oil.
  • Mediterranean Toss directions:.
  • 1. Heat oil in large nonstick skillet on medium high heat.
  • 2. Add chicken (cook 8-10 minutes or until chicken is completely cooked).
  • 3. Add garlic and toss.
  • 4. Add artichokes, olives and a pinch of salt and pepper. Do not toss ingredients.
  • 5. Add white wine so it can absorb the seasonings and cook the garlic.
  • 6. Toss ingredients and let alcohol cook off and reduce in volume by half.
  • 7. Add pesto, tossing until ingredients are evenly coated.
  • 8. Throw in pasta and toss.
  • 9. Remove from heat and let it sit for a minute.
  • 10. Add spinach and toss until spinach is slightly wilted.
  • 11. Add feta and toss lightly until everything is mixed*.
  • 12. EAT!
  • * You could also plate the pasta and then sprinkle the feta on top instead of tossing it inches.

8 oz of sundried tomatoes packed in oil chopped
8 oz of pitted kalamata olives chopped
1/4 cup of extra virgin olive oil
1 tsp of oregano
2 cloves of garlic chopped
12 oz of feta cheese crumbled

Steps:

  • Put 6 quarts of water with salt to boil Take 1/4 cup of the olive oil and put into a saute pan, add chopped garlic and saute for a few minutes Add chopped olives and tomatoes to the oil/garlic mix, saute until coated add oregano and let cook on low for about 3-5 minutes. Add pasta to boiling water and cook until pasta is al dente about 10 minutes. Drain pasta and toss with olive oil/tomato and olive mixture add crumbled feta cheese and serve. Goes great with tossed salad and fresh Italian or French bread.
