MEDITERRANEAN MARINATED SALAD

Mediterranean Marinated Salad image

An easy, tasty mixture of vegetables, marinated in balsamic vinegrette. Holds well, so great for picnics or potlucks. Best when all vegetables are cut to similar size. Avocado may not be an authentic addition, but we like it - change the vegetables to suit what you have and what you like. You may have to adjust the salt, depending on whether you use olives and feta cheese or not.

Tips:

  • Choose fresh, seasonal vegetables: The quality of your ingredients will greatly impact the flavor of your salad. Look for brightly colored, crisp vegetables that are at their peak of ripeness.
  • Marinate the vegetables for at least 30 minutes: This will allow the flavors of the marinade to permeate the vegetables and enhance their taste.
  • Use a variety of vegetables: This will give your salad a more interesting flavor and texture. Some good options include tomatoes, cucumbers, bell peppers, onions, zucchini, and artichoke hearts.
  • Don't overcook the vegetables: You want the vegetables to be crisp and tender, not mushy. Blanch the vegetables for a few minutes, or roast them in the oven until they are just tender.
  • Use a flavorful dressing: The dressing is what will bring all the flavors of the salad together. Use a dressing that is flavorful and complements the vegetables, such as a vinaigrette or a tahini dressing.

Conclusion:

A Mediterranean marinated vegetable salad is a healthy, delicious, and refreshing dish that is perfect for any occasion. It is packed with fresh vegetables, flavorful herbs, and a tangy dressing. This salad is sure to please everyone at your table. Here are some additional tips for making the best Mediterranean marinated vegetable salad:
  • If you are short on time, you can use a store-bought marinade. Just be sure to choose one that is flavorful and complements the vegetables.
  • If you are making the salad ahead of time, be sure to drain the vegetables well before serving. This will prevent the salad from becoming watery.
  • Garnish the salad with fresh herbs, such as basil, oregano, or thyme, before serving. This will add a pop of color and flavor.
