MEDITERRANEAN LATKES (SAVORY PANCAKES)

Mediterranean Latkes (Savory Pancakes) image

Delicious latkes using up many of the ingredients required for the RSC contest (2004). These are very flavorful and, if made slightly smaller, would be a great appetizer with the dipping sauce. Do not be put off by the long list of ingredients, the recipe is MUCH easier to make than it reads.

Time 1h40m

Yield 24 latkes (pancakes), 6 serving(s)

Number Of Ingredients 21

1 cup buttermilk
4 ounces cream cheese, room temperature
1 garlic clove, minced very fine
1/2 teaspoon salt (or to taste)
1/3 cup fresh dill, minced
1/2 cup brown rice
1/2 cup lentils
3 cups water
2 cups packed grated zucchini
2 cups packed grated sweet potatoes
1 large onion, minced (about 1 cup)
1 teaspoon salt
8 ounces feta cheese, crumbled
3/4 cup parmesan cheese, grated
3 garlic cloves, minced
1/2 cup fresh parsley, minced
1/3 cup fresh dill, minced
1/3 cup of fresh mint, minced
1 egg
1 cup rye flour or 1 cup all-purpose flour
oil (for frying)

Steps:

  • Whiz together all sauce ingredients in a mini-blender and pour into a small crock; cover with plastic wrap and refrigerate.
  • Bring 3 cups water to the boil in a small saucepan; add brown rice and boil for 30 minutes; add lentils and boil for 20 minutes longer (the mixture will look like porridge); allow to cool (mixture will thicken as it cools).
  • Put minced onion, grated sweet potato and zucchini into a colander and toss with 1 tsp salt; allow to drain for ½ an hour; after half an hour, take handfuls of the vegetable mixture and squeeze as much water out as you can from it.
  • Place it into a large bowl as you squeeze it dry; add cooled rice/lentil mixture, minced garlic, cheeses, parsley, dill, mint, egg and rye flour; with hands combine very well so that everything is evenly distributed; refrigerate for at least 30 minutes before frying.
  • Pour enough oil (I used olive) into a large, non-stick skillet to come ¾ of an inch up sides of pan; heat over medium-high heat until small amount of latke mixture put in will immediately come to the surface and fry fairly briskly.
  • Take about 2 tbsp of latke mixture at a time, shape into a patty that is about 3 inches in diameter and ½ an inch thick; fry 4-5 minutes; after 4-5 minutes, gently turn patty over and fry other side; as patties turn a deep golden-brown, remove from pan and drain on paper towels.
  • Repeat with remaining latke mixture until all the patties have been fried.
  • Serve warm or at room temperature with the sauce.

SAVOURY PANCAKES

Our simple savoury pancake recipe is great with a sprinkling of strong cheddar and chunks of ham for an easy supper or weekend brunch

Provided by Elena Silcock

Categories     Breakfast, Brunch, Supper

Time 20m

Number Of Ingredients 6

200g plain flour
2 large eggs , beaten
500ml milk
oil , for frying
130g ham , cut into small chunks
150g cheddar cheese, grated

Steps:

  • Using electric beaters or a hand whisk, combine the flour, eggs and milk with a big pinch of salt in a large bowl.
  • Heat a 20cm crêpe pan until very hot, then pour a little oil into the pan. Swirl the pan so the oil creates an even covering. Ladle a spoonful of the pancake mixture into the pan and tip the pan so the mixture fills the pan in an even layer. Cook for 30 seconds, then flip and scatter with some cheese and ham, and cook until the cheese is melting. Add a crack of black pepper and fold. Keep on a plate covered with foil in a warm oven while you make the remaining pancakes.

POTATO LATKES (PANCAKES)

Potato Latkes (Pancakes) image

These are sauteed pancakes, and delicious. This is the way my grandmother made them, and they were served at the Jewish holidays of Hanukah and during the 8 days of Passover, but not at the Seder (dinner and religious service), but for a light supper. They are good served as a side dish with the Winter Vegetable Plate in my cookbook. If you don't have Matzo Meal (which is also great for breading meat or fish),substitute all purpose flour.

Time 1h

Yield 20 latkes, 4-6 serving(s)

Number Of Ingredients 8

2 lbs potatoes
2 extra large eggs
1 teaspoon salt
black pepper
2 tablespoons matzo meal
1 small apple, peeled (optional)
1 small onion
1/4 cup vegetable oil (safflower, peanut, or canola)

Steps:

  • Peel potatoes, apple, and onion.
  • Put them through a meat grinder, if you have one. Alternatively, grate them in food prcessor or blender.
  • Pour off some of the excess water from grated potatoes.
  • Beat eggs lightly in medium bowl and add grated potato mixture, salt, and matzo meal or flour.
  • Pour about 1" of oil in large skillet and heat until a few drops of water sizzle when they hit the oil.
  • Drop the mixture by tablespoons into the hot oil.
  • Brown latkes to golden color, then flip over and brown the other side.
  • Immediately remove to double or triple layer of paper towels to drain. Serve hot, with apple sauce and sour cream'.
  • If you can't serve at once, put in 190 deg. F oven. I put each batch in the oven as soon as they are drained, so that all are good and crisp. I also usually double or triple the recipe according to the number of people eating.

Tips:

  • Use fresh herbs: Fresh herbs like parsley, cilantro, and dill add a vibrant flavor to the latkes. Don't skimp on them!
  • Don't overmix the batter: Overmixing the batter will make the latkes tough. Mix just until the ingredients are combined.
  • Use a hot pan: A hot pan will help the latkes cook evenly and prevent them from sticking.
  • Don't overcrowd the pan: Don't overcrowd the pan with latkes, or they won't cook evenly. Cook them in batches if necessary.
  • Serve immediately: Latkes are best served hot and fresh out of the pan. They can be kept warm in a low oven for a short time, but they're best enjoyed right away.

Conclusion:

Mediterranean latkes are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They're easy to make and can be customized to your liking. With their crispy exterior and fluffy interior, they're sure to be a hit with everyone who tries them.

So next time you're looking for a new and exciting way to enjoy your favorite Mediterranean flavors, give these latkes a try. You won't be disappointed!
