MEDITERRANEAN BROWN RICE SALAD

My family and friends all love this salad, which they've referred to as "the Greek salad." The recipe makes enough to feed a crowd, so it's a perfect bring-along for a big party. No matter what you're looking for-something with the Greek flavors you love, or just a healthy, simple salad-it will not disappoint! If you'd like, substitute orzo for the rice. -Sarah Hawkins, Wanatah, Indiana

This is a favorite of mine! My stepmom and I first made this my freshman year in college as an experiment, and I have been making it ever since. May be served hot or cold.

Tips:

  • Use high-quality ingredients. Fresh, flavorful ingredients will make all the difference in your salad. Look for ripe tomatoes, crisp cucumbers, and fragrant herbs.
  • Don't overcook the rice. Brown rice should be cooked until it is tender but still has a slight chew to it. Overcooked rice will be mushy and unappetizing.
  • Let the salad cool before serving. This will help the flavors to meld and the rice to absorb the dressing.
  • Serve the salad with a variety of toppings. This will allow your guests to customize their salads to their liking. Some popular toppings include grilled chicken, roasted vegetables, and crumbled feta cheese.

Conclusion:

This Mediterranean brown rice salad is a delicious and healthy dish that is perfect for a summer picnic or potluck. It is packed with fresh vegetables, herbs, and grains, and it is also a good source of protein and fiber. The tangy dressing adds a pop of flavor that will leave you wanting more. So next time you are looking for a light and refreshing salad, give this Mediterranean brown rice salad a try.
