MEDITERRANEAN HERB BAKED CHICKEN

The selection of spices used in this dish create an exotic aroma. I love the combination of olives, capers and tomatoes. It's one of my favorites. You could serve it with steamed couscous, but we prefer it with rice. Plan ahead as it needs to marinate.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in the final dish. Use organic, free-range chicken, ripe vegetables, and flavorful herbs and spices.
  • Marinate the chicken: Marinating the chicken in a flavorful mixture of olive oil, herbs, and spices will help to infuse it with flavor and keep it moist during cooking.
  • Roast the vegetables separately: Roasting the vegetables separately from the chicken will help to ensure that they cook evenly and retain their vibrant colors.
  • Use a variety of vegetables: A variety of vegetables will add color, flavor, and nutrition to the dish. Some good choices include cherry tomatoes, zucchini, bell peppers, and mushrooms.
  • Don't overcrowd the pan: Overcrowding the pan will prevent the chicken and vegetables from cooking evenly. Make sure there is enough space between the pieces of chicken and vegetables so that they can all cook properly.
  • Roast until the chicken is cooked through: The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit. Use a meat thermometer to check the temperature of the chicken to ensure that it is cooked properly.
