MEAT LOAF

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Categories     main-dish

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 18

1/4 cup ketchup or chili sauce
2 tablespoons light or dark brown sugar
2 teaspoons cider or white vinegar
2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black paper
2 teaspoons Dijon mustard
2 teaspoons Worchestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 up milk, buttermilk or low-fat plain yogurt
2 pounds meat-loaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)
2/3 cups crushed saltine crackers (about 16) or quick oatmeal or 1 1/3 cups fresh bread crumbs
1/3 cup minced parsley
6 ounces thin-sliced bacon

Steps:

  • For the glaze: Mix all ingredients in a small bowl; set aside.
  • For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
  • Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
  • Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
  • Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
  • Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

1/2 teaspoon unflavored gelatin
1 tablespoon soy sauce
1 teaspoon Dijon mustard

21 saltines, crushed
1/2 cup ketchup
1 teaspoon Tabasco sauce
1/2 teaspoon ground coriander
1/4 cup cider vinegar
3 tablespoons light brown sugar, packed

Steps:

  • Preheat oven to 375 degrees F and place oven rack in center of oven.
  • Prepare your cooking pan by placing a cooling rack over a baking pan with sides, then cover with aluminum foil; poke small holes every half inch or so and spray with cooking spray.
  • Place the grated cheese on a plate and place in the freezer until ready to use.
  • Heat a skillet over medium high heat, add butter and cook until foamy; add onions and celery, cook, stirring occasionally, until they begin to caramelize, about 8 minutes.
  • Add in garlic, thyme, paprika; cook, stirring, about a minute.
  • Reduce heat to low and stir in tomato juice; transfer to a small bowl and let cool.
  • In a large bowl, whisk together eggs and broth; sprinkle with the gelatin and let sit 5 minutes.
  • Stir in soy sauce, mustard, saltines, parsley, salt, pepper, and the onion mixture; crumble frozen cheese over top.
  • Add ground beef and mix with hands until combined.
  • Transfer meat mixture to prepared foil lined pan and form into a 10 x 6 inch loaf (it should be about 2 inches high).
  • Bake to an internal temperature of 135 to 140 degrees F, about 55 to 65 minutes; remove from oven and set oven to broil.
  • Meanwhile, combine glaze ingredients in a small saucepan, bring to a simmer.
  • Stir until syrupy, about 5 minutes.
  • Spread half the glaze over the meatloaf and broil until bubbly and beginning to brown at the edges; repeat with remaining glaze.
  • Let sit 20 minutes before slicing.

Tips:

  • For the best flavor, use a combination of ground beef and ground pork.
  • Soak the bread crumbs in milk before adding them to the meatloaf mixture. This will help to keep the meatloaf moist.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Form the meatloaf mixture into a loaf shape and place it in a baking dish. Bake the meatloaf at 350 degrees Fahrenheit for 1 hour and 15 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  • While the meatloaf is baking, make the brown sugar ketchup glaze. Combine the ketchup, brown sugar, vinegar, Worcestershire sauce, and mustard in a saucepan. Bring the mixture to a simmer over medium heat, stirring constantly. Simmer the glaze for 5 minutes, or until it has thickened.
  • Remove the meatloaf from the oven and spread the brown sugar ketchup glaze over the top. Return the meatloaf to the oven and bake for an additional 15 minutes, or until the glaze is bubbly and browned.
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Conclusion:

Meatloaf with brown sugar ketchup glaze is a classic comfort food that is easy to make and always a crowd-pleaser. The combination of ground beef, ground pork, and bread crumbs makes a moist and flavorful meatloaf, while the brown sugar ketchup glaze adds a sweet and tangy flavor.
