MEATLOAF WITH A RANCH TWIST
I wanted a different twist to my meatloaf, so I added a package of dry Hidden Valley Ranch Dressing Mix. Instead of using ketchup for the sauce, I use V8 to add a different taste. Use the spicy if you want more of a kick to your sauce. My kids went back for seconds when normally I have to beg them to just eat meatloaf.

- Preheat an oven to 350 degrees F (175 degrees C).
- Combine the vegetable juice, brown sugar, and Worcestershire sauce in a saucepan over medium heat; cook until the sauce thickens, about 10 minutes.
- Mix the ground beef, garlic powder, onion powder, ranch dressing mix, sage, salt, and pepper together in a large bowl. Gradually sprinkle the bread crumbs into the meat while mixing so the crumbs are distributed evenly throughout; add the egg and milk and continue mixing. Shape the mixture into a loaf and transfer to a loaf pan. Pour about half the sauce over the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cut the meatloaf into 6 even slices. Pour the remaining sauce over the slices to serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with a potato masher, and set aside.
- Heat olive oil in a skillet over medium heat. Cook and stir the onion and garlic until the onion is translucent, about 5 minutes. Set the onion and garlic aside.
- In a large bowl, mix the ground beef, bread crumbs, parsley, salt, black pepper, onion and garlic mixture, eggs, chicken broth, and Romano cheese until thoroughly combined. In a second bowl, mix the mashed potatoes and ricotta cheese.
- Spoon half the meat mixture into the prepared baking dish, and smooth into an even layer with a spoon. Spread the mashed potato mixture over the meat, leaving a 1/2-inch border around the edge of the meat; sprinkle 1 cup mozzarella cheese over the mashed potato layer. Cover the cheese with the remaining meat mixture in an even layer; press the edges down to seal in the mashed potatoes. Sprinkle loaf with additional 2 tablespoons of mozzarella cheese, if desired.
- Bake in the preheated oven until the loaf is browned and the meat is no longer pink, about 1 hour. An instant-read meat thermometer inserted into the center of the loaf should read at least 160 degrees F (70 degrees C). Let the loaf stand for 10 minutes before serving.

- Start out with a large mixing bowl.
- Preheat oven to 350°F.
- Chop 1/2 onion and place in mixing bowl.
- Chop 1/2 green pepper and place in mixing bowl.
- Add ground round, bread crumbs, salt, pepper, French Onion Soup mix, egg into the mixing bowl.
- Mix well.
- Add 1/2 bottle of barbecue sauce to the mixture and mix well.
- Form the mixture into a square or loaf. (I usually form it to the pan I am using).
- Slice the remaining onion and green peppers and arrange on top of loaf.
- Pour 1/4 of the remaining barbecue sauce on the top of the loaf. (I usually make a letter "M" with the sauce--it makes it look pretty).
- Place in oven.
- Take it out of oven in 1/2 hour and pour the remainder of the barbecue sauce on top.
- Let cook for another 1/2 hour.
- Check for doneness.
- I like mine well done.
- Adjust cooking time to your liking.
- Serve immediately.
- Great with mashed potatoes and green beans.

- 1. Grease loaf pans with extra-virgin olive oil. Preheat oven to 350 dF.
- 2. Topping: Using the 1/4 can tomato paste you retained add 1/4 c ketchup and 1/8 c vidalia onion poppyseed dressing...mix together well, set aside.
- 3. Grab yourself a large mixing bowl (big enough to get your hands in), to mix ingredients up. Add aLL ingredients together, (except topping mix), and combine well.
- 4. Put into oiled loaf pans and spread your topping all over the top of each loaf. This mixture will make enough to fill 1-regular sized loaf pan plus 2-mini loaf pans (or 2-regular loaf pans).
- 5. Bake for approximately 1 to 1 1/2 hours (or when the internal temperature of the meatloaf reaches 160 dF)...I baked all 3 in oven at the same time together, so it took about 1-1/2 hours to bake it, When baked let it rest about 5 minutes or more, on cooling racks before removing from pan to platter, then it's ready to eat. I started making these meatloaf-meatballs when our children were young. I guess it's all about presentation. The meatballs were more appealing than the average meatloaf. When I fix these, I mix all my ingredients and meat together and let them marinate in the refrigerator for an hour or even longer. It only takes 10 min to prep...

- 1. Preheat oven to 450*
- 2. In the 1/2 cup of ketchup-mix together ketchup and brown sugar. I use a fork to mix this,making sure I get all the lumps out.
- 3. In another bowl mix all of the remaining ingredients. You can now add your ketchup and brown sugar reserving 1/4 cup to brush on the tops when your meat loaves are finished baking. I usually mix more than a 1/2 cup and a little more sugar, using the full 1/2 cup in my mixture and still have 1/4 cup to brush on the tops of the loaves when finished baking
- 4. Lightly spray muffin pan with cooking spray. Press or roll your meat mixture into 12 balls. I roll mine into mini meatloaf balls. Place in muffin tin. You can now brush some of the ketchup and brown sugar mixture on tops saving enough to brush the tops again when they have finished baking. I place my muffin tin on a cookie pan with sides in to the oven. In case the juices spill out while baking
- 5. Bake 18 to 20 minutes or until meat is no longer pink in center and meat thermometer inserted in the center reads 160*F. Remove from oven. Poor any excess grease off, brush the tops with remaining ketchup and sugar. Remove from muffin pan and place mini loaves on a platter layered in paper towels. These are delicious with my homemade mashed potatoes!! Enjoy!

- 1. In a large bowl combine first eleven ingredients. Do not add apple yet. Make sure ingredients are well combined. Place meat mixture in baking dish. Peel, core & slice apple. Make a tunnel in middle of meatloaf. Arrange apple slices & cover with meat mixture.
- 2. Bake uncovered at 300 degrees for 1 hr. Place sauce ingredients in small bowl & mix well. Remove dish from oven. Drain excess fluids. Add sauce. Cover with aluminum foil. Turn oven down to 250 degrees. Place dish back in oven for 30 minutes. Remove from oven & let set for 5-10 minutes before serving.
